Instructions

Step 1: Cook the Pasta (Intensity: Low)

  1. Bring a large pot of heavily salted water to a rolling boil.
  2. Add the macaroni and cook for 2 minutes less than the package instructions for al dente . (The pasta will continue to cook in the oven and absorb sauce without getting mushy).
  3. Drain the pasta, toss with 1 tablespoon of olive oil to prevent sticking, and set aside.

Step 2: Prepare the Zesty Meat Sauce (Intensity: Medium)

  1. Heat a large skillet over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks.
  2. Once partially browned (about 4 minutes), add the diced onion and minced garlic. Sauté for another 4–5 minutes until the sausage is cooked through and onions are translucent.
  3. Stir in the chopped artichoke hearts, dried oregano, dried basil, crushed red pepper flakes, and black pepper.
  4. Pour in the marinara sauce, turn heat down to low, and simmer for 8–10 minutes to let the flavors meld. Remove from heat.

Step 3: Make the Creamy Cheese Base (Intensity: Medium – Requires Attention)

  1. In a medium saucepan, melt 3 tablespoons of butter over medium heat.
  2. Sprinkle in the flour and whisk continuously for 1 to 2 minutes to cook out the raw flour taste (forming a pale roux).
  3. Slowly pour in the warm milk and heavy cream in a steady stream, whisking constantly to prevent lumps.
  4. Bring to a gentle simmer and cook for 3–5 minutes until the sauce thickens enough to coat the back of a spoon.
  5. Reduce heat to low. Whisk in the nutmeg, salt, 2 cups of Sharp White Cheddar, 1 cup of Mozzarella, and ¼ cup of Parmesan until smooth and completely melted.
  6. Fold the cooked macaroni into this creamy cheese sauce until evenly coated.

Step 4: Assemble the Casserole (Intensity: Low)

  1. Preheat your oven to 375°F (190°C) . Lightly grease a 9×13-inch baking dish.
  2. Spread half of the creamy cheese-coated macaroni across the bottom of the dish.
  3. Layer the entire batch of Zesty Italian Meat Sauce over the pasta layer.
  4. Top with the remaining cheesy macaroni, spreading it out evenly.
  5. Sprinkle the remaining ½ cup Mozzarella and ¼ cup Parmesan over the top.

Step 5: Add Topping & Bake (Intensity: High Heat / Low Effort)

  1. In a small bowl, mix the Panko breadcrumbs, melted butter, Italian seasoning, and chopped fresh parsley. Scatter evenly over the top cheese layer.
  2. Bake uncovered at 375°F (190°C) for 25 to 30 minutes , or until the edges are bubbling and the breadcrumb topping is deep golden brown.
  3. Optional: Switch the oven to Broil on HIGH for 1–2 minutes at the end for an extra crisp crust (watch closely to prevent burning!).

Step 6: Rest and Serve

  1. Remove from the oven and let rest for 10 minutes before serving. This allows the cheeses to set so you can scoop clean portions.
  2. Garnish with additional fresh basil or parsley and extra grated Parmesan.
