Instructions
1. Prep the Salmon Base
- Drain the canned salmon thoroughly to prevent excess moisture from making the patties soggy. In a large mixing bowl, gently flake the salmon using a fork, leaving moderate chunks to retain a desirable seafood texture.
2. Mix the Binding Ingredients
- To the salmon bowl, add the Panko breadcrumbs, beaten egg, mayonnaise, Dijon mustard, Worcestershire sauce, chopped aromatics (onion, parsley/dill), and spices (garlic powder, paprika, salt, and pepper). Gently fold the ingredients together using a silicone spatula or fork until just combined. Avoid over-mixing to keep the patties light and fluffy.
3. Shape into Patties
- Divide the salmon mixture into 8 equal portions. Firmly press each portion between your hands to form patties approximately 1/2-inch thick and 3 inches in diameter.
- Chef’s Tip: Place the shaped patties on a parchment-lined sheet and chill in the refrigerator for 10 minutes. This helps solidify the fat binder so the patties hold their shape during frying.
4. Preheat and Coat
- Preheat your air fryer to 390°F (200°C) for 3 to 5 minutes. Lightly spray the perforated basket with high-heat cooking spray. Generously spray the top side of each salmon patty with cooking spray to ensure optimal browning.
5. Air Fry to Crispy Perfection
- Arrange the patties in a single layer in the air fryer basket, leaving space between each patty for hot air circulation. Cook in batches if necessary.
- First Side: Air fry at 390°F (200°C) for 7 minutes .
- Flip & Finish: Carefully flip each patty using a thin spatula. Lightly spritz the second side with cooking spray and air fry for an additional 4 to 5 minutes , or until golden brown and crisp around the edges.
6. Rest & Serve
- Remove the salmon patties from the air fryer and rest them on a plate for 2 minutes. Serve hot with fresh lemon wedges, tartar sauce, remoulade, or garlic aioli.
