Instructions

1. Prep the Salmon Base

  1. Drain the canned salmon thoroughly to prevent excess moisture from making the patties soggy. In a large mixing bowl, gently flake the salmon using a fork, leaving moderate chunks to retain a desirable seafood texture.

2. Mix the Binding Ingredients

  1. To the salmon bowl, add the Panko breadcrumbs, beaten egg, mayonnaise, Dijon mustard, Worcestershire sauce, chopped aromatics (onion, parsley/dill), and spices (garlic powder, paprika, salt, and pepper). Gently fold the ingredients together using a silicone spatula or fork until just combined. Avoid over-mixing to keep the patties light and fluffy.

3. Shape into Patties

  1. Divide the salmon mixture into 8 equal portions. Firmly press each portion between your hands to form patties approximately 1/2-inch thick and 3 inches in diameter.
  2. Chef’s Tip: Place the shaped patties on a parchment-lined sheet and chill in the refrigerator for 10 minutes. This helps solidify the fat binder so the patties hold their shape during frying.

4. Preheat and Coat

  1. Preheat your air fryer to 390°F (200°C) for 3 to 5 minutes. Lightly spray the perforated basket with high-heat cooking spray. Generously spray the top side of each salmon patty with cooking spray to ensure optimal browning.

5. Air Fry to Crispy Perfection

  1. Arrange the patties in a single layer in the air fryer basket, leaving space between each patty for hot air circulation. Cook in batches if necessary.
  2. First Side: Air fry at 390°F (200°C) for 7 minutes .
  3. Flip & Finish: Carefully flip each patty using a thin spatula. Lightly spritz the second side with cooking spray and air fry for an additional 4 to 5 minutes , or until golden brown and crisp around the edges.

6. Rest & Serve

  1. Remove the salmon patties from the air fryer and rest them on a plate for 2 minutes. Serve hot with fresh lemon wedges, tartar sauce, remoulade, or garlic aioli.
