Instructions

Step 1: Prep the Ribs (5 minutes)

  1. Pat the ribs dry with paper towels. Flip the rack bone-side up and locate the thin membrane covering the back of the bones. Slide a butter knife under it at one corner, grip it with a paper towel, and pull it off in one piece. This step is essential — the membrane would otherwise turn tough and chewy.

Step 2: Season (5 minutes)

  1. Brush the ribs all over with a thin layer of yellow mustard (it acts as a binder and doesn’t taste mustardy once cooked). Generously coat both sides with the dry rub, pressing it into the meat. Use all of the rub — it looks like a lot, but it builds the crust.

Step 3: First Air Fry — Low & Slow (25–30 minutes at 300°F / 150°C)

  1. Preheat the air fryer to 300°F (150°C) for 3 minutes. Place the ribs bone-side down in the basket. If the rack is too long, cut it in half and cook in two batches, or curl it slightly to fit. Air fry for 25–30 minutes at 300°F (150°C) , flipping halfway through (about the 13-minute mark). This low phase renders fat and tenderizes the meat without burning the sugar in the rub.
  2. Tip: If your air fryer runs hot, tent the ribs loosely with foil during this stage to prevent the sugar from scorching.

Step 4: Second Air Fry — High Heat (10–15 minutes at 380°F / 195°C)

  1. Increase the temperature to 380°F (195°C) . Brush the ribs generously with barbecue sauce (mixed with the cider vinegar if using) and cook 5 minutes . Flip, brush the other side, and cook another 5–8 minutes , until the sauce is sticky, bubbly, and darkened at the edges. Watch closely during the final minutes — sugar-heavy sauces can go from caramelized to burnt quickly.

Step 5: Rest (10 minutes)

  1. Transfer the ribs to a cutting board and rest 10 minutes — this lets the juices redistribute so they don’t run out when sliced. Slice between the bones and serve with extra barbecue sauce.
