Ingredients

  • Potatoes: 2.5 lbs (about 4 large) Russet (Burbank) potatoes. Why Russets? They are high in starch and low in moisture, which is essential for a fluffy interior and a crisp shell.
  • Oil: 1.5 to 2 tablespoons high-smoke-point oil (such as avocado, canola, or grapeseed oil). Avoid extra virgin olive oil, as it can burn at high air fryer temperatures.
  • Salt: 1 teaspoon fine sea salt or kosher salt (plus extra for seasoning right out of the fryer).
  • Optional Seasonings: ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon freshly cracked black pepper
  • Optional finish: finely chopped fresh parsley or a sprinkle of grated Parmesan cheese.

Instructions

Step 1: The Soak (Removing Excess Starch)

  1. Wash and Peel: Peel your Russet potatoes (you can leave the skin on if you prefer rustic-style fries, but peeling helps achieve a more uniform crunch).
  2. Cut Uniformly: Cut the potatoes lengthwise into ¼-inch to ⅜-inch thick sticks. Try to keep them as uniform as possible so they cook at the exact same rate.
  3. Soak in Cold Water: Place the freshly cut potato sticks into a large bowl filled with cold water. Let them soak for at least 30 minutes (or up to overnight in the refrigerator). This draws out excess surface starch, which prevents the fries from gumming together or burning before they cook through.

Step 2: The Dry and Steam (The Secret to Crunch)

  1. Drain and Rinse: Drain the potatoes in a colander and rinse them thoroughly with cold water.
  2. Thoroughly Dry: This is the most crucial step. Transfer the potatoes to a clean kitchen towel or layers of paper towels. Pat them completely dry. Any residual moisture on the outside of the potatoes will steam them instead of letting them crisp up in the air fryer.

Step 3: The Seasoning Toss

  1. Coat Evenly: Place the thoroughly dried potato sticks into a large mixing bowl. Drizzle the oil over them. Toss thoroughly with your hands to ensure every single potato stick has a micro-thin coating of oil.
  2. Add Base Salt: Sprinkle with 1 teaspoon of salt (and any optional garlic powder or paprika if you aren’t waiting until the end to season). Toss once more.

Step 4: Air Frying for Maximum Crispness

  1. Preheat the Air Fryer: Preheat your air fryer to 380°F (190°C) for 3 to 5 minutes. A hot basket prevents sticking and gives the fries an immediate sear.
  2. Do Not Overcrowd (Crucial!): Add the fries to the air fryer basket. Do not dump them all in a massive heap. For extra crispness, cook them in a single layer with a little breathing room between pieces. If necessary, cook in two separate batches. Overcrowding traps steam, resulting in soggy fries.
  3. The First Cook: Cook at 380°F for 15 minutes.
  4. The Shake: Pull out the basket every 5 minutes and shake it vigorously to redistribute the fries, ensuring all sides brown evenly.
  5. The High-Heat Finish: Crank the air fryer temperature up to 400°F (200°C) for the final 5 to 7 minutes. Shake the basket halfway through. This final blast of high heat drives away the last bit of surface moisture, locking in an elite, shatteringly crisp exterior.
