Instructions

Step 1: Prepare the Apple Filling

  1. Melt 2 tablespoons of butter in a large skillet over Medium-Low intensity .
  2. Add the sliced apples, lemon juice, 1 teaspoon cinnamon, nutmeg, allspice, and 2 tablespoons brown sugar.
  3. Stir well to coat the apples evenly. Cook for 5 to 7 minutes until the apples begin to soften but maintain a bit of bite.
  4. Pour in the cornstarch slurry and cook for an additional 1 to 2 minutes on Medium intensity until the juices thicken into a glossy sauce. Remove from heat and set aside.

Step 2: Prepare the Sauce

  1. In a small saucepan over Medium intensity , combine 1/2 cup butter, granulated sugar, light brown sugar, apple cider (or water), and 1/2 teaspoon cinnamon.
  2. Bring the mixture to a gentle boil, stirring constantly so the sugar dissolves smoothly.
  3. Once bubbling, lower the intensity to Low and cook for 2 minutes until slightly reduced.
  4. Remove from heat and stir in 1 teaspoon of pure vanilla extract.

Step 3: Assemble the Enchiladas

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Warm the flour tortillas in the microwave for 15–20 seconds to make them pliable.
  3. Spoon about 1/3 cup of apple filling down the center of each tortilla. If using chopped nuts, sprinkle a pinch over the apples.
  4. Roll each tortilla tightly around the filling and place seam-side down in the prepared baking dish.

Step 4: Bake to Golden Perfection

  1. Pour the prepared hot butter-caramel sauce evenly over the top of the assembled enchiladas, ensuring all tortilla tops are well coated.
  2. Let the baking dish sit at room temperature for 10 minutes before placing it in the oven. This allows the tortillas to soak up some of the syrup.
  3. Place in the oven and bake at 350°F (175°C) for 25 to 30 minutes , or until the tops are golden brown and the sauce is bubbling around the edges.
