Instructions

Step 1: Prepare the Potatoes

  1. Wash and dry the baby potatoes thoroughly. Slice each potato in half so they cook evenly and develop a crispy texture during roasting.
  2. If you are using larger potatoes, cut them into evenly sized chunks about 1 to 1½ inches wide.
  3. Preheat your oven to 425°F (220°C) . High heat is essential for achieving crispy roasted potatoes.
  4. Line a baking sheet with parchment paper for easier cleanup if desired.

Step 2: Season the Potatoes

  1. In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, Italian seasoning, paprika, and onion powder.
  2. Add the potatoes to the bowl and toss until every piece is evenly coated with the seasoning mixture.
  3. Sprinkle in the Parmesan cheese and toss again gently. The cheese will stick to the potatoes and create a crispy, flavorful crust during roasting.

Step 3: Arrange on Baking Sheet

  1. Spread the potatoes on the prepared baking sheet in a single layer with the cut side facing down.
  2. Avoid overcrowding the pan because crowded potatoes steam instead of roast. Using enough space helps them become golden and crispy.

Step 4: Roast the Potatoes

  1. Place the baking sheet in the preheated oven and roast for 35 to 40 minutes .
  2. Halfway through cooking, flip the potatoes carefully using a spatula to ensure even browning.
  3. The potatoes are ready when they are:
  4. Crispy on the edges
  5. Golden brown
  6. Fork tender in the center

Step 5: Garnish and Serve

  1. Remove the potatoes from the oven and immediately sprinkle with fresh parsley and additional Parmesan cheese if desired.
  2. Serve hot with your favorite dipping sauce or alongside your favorite main course.
