Instructions
Step 1: Season the Chicken (3 minutes)
- In a mixing bowl, toss the chicken strips with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, cayenne (if using), salt, and black pepper until evenly coated. Add the sliced bell pepper and onion and toss again.
Step 2: Air Fry the Fajita Filling (8–10 minutes)
- Preheat the air fryer to 390°F (200°C) for 3 minutes. Add the chicken and vegetable mixture to the basket in a single layer. Air fry at 390°F (200°C) for 8–10 minutes , shaking the basket halfway through, until the chicken is cooked through (internal temperature of 165°F / 74°C) and the peppers and onions are softened with lightly charred edges. Remove from the basket and set aside. Wipe the basket clean if needed.
Step 3: Assemble the Quesadillas (3 minutes)
- Lay a tortilla flat. Spread half the cheese over one half of the tortilla, top with half the chicken fajita filling, then add another layer of cheese over the filling (cheese on both sides helps everything stick together). Fold the empty half over the filling to create a half-moon shape. Press gently and secure the edge with a toothpick if it won’t stay closed. Repeat with the second tortilla.
Step 4: Air Fry the Quesadillas (5–6 minutes)
- Lightly spray or brush both sides of each quesadilla with cooking spray or melted butter. Place one quesadilla in the air fryer basket (cook one at a time for best results, or two side by side if your basket is large enough). Air fry at 375°F (190°C) for 5–6 minutes , flipping carefully with tongs halfway through, until the tortilla is golden brown and crisp and the cheese is fully melted. Repeat with the second quesadilla.
Step 5: Rest and Slice (2 minutes)
- Transfer the quesadilla to a cutting board and rest for 2 minutes — this lets the cheese set slightly so the filling doesn’t spill out when sliced. Remove the toothpick, cut into wedges, and serve immediately with sour cream, salsa, guacamole, cilantro, and lime wedges.
Step 6: Store
- Store leftover filling in an airtight container in the refrigerator for up to 3 days . Reheat assembled quesadillas in the air fryer at 350°F (175°C) for 3–4 minutes to restore crispness. Freeze assembled, uncooked quesadillas wrapped tightly for up to 2 months and air fry from frozen at 375°F for 8–10 minutes.
