Instructions

Step 1: Prepare the Turkey

  1. Begin by removing the turkey breast from the refrigerator. It is crucial to let it sit at room temperature for about 20-30 minutes before cooking. This ensures even cooking. Pat the turkey breast completely dry with paper towels. Moisture is the enemy of crispy skin. If your roast is not pre-tied, use kitchen twine to tie it at 1-inch intervals to create a compact, even shape.

Step 2: Create the Garlic Herb Butter

  1. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, sage, and lemon zest. Mix with a fork until a smooth paste forms. Season the paste with a pinch of salt and pepper.

Step 3: Season and Stuff

  1. Season the entire turkey breast generously with kosher salt and black pepper, ensuring you get into the crevices. Using your fingers, gently loosen the skin from the meat without tearing it. Spread half of the garlic herb butter directly onto the meat underneath the skin. Smooth the skin back over the meat. Rub the remaining butter over the outside of the skin. If using, place the quartered onion and lemon halves into the air fryer basket underneath the rack (or around the turkey if it fits).

Step 4: Preheat and Arrange

  1. Preheat your air fryer to 350°F (175°C) for 5 minutes. Place the turkey breast skin-side up in the air fryer basket. Ensure there is enough room for air to circulate; the turkey should not touch the top heating element. If your air fryer is small, you may need to tent the top loosely with foil to prevent burning (remove foil for the last 10 minutes).

Step 5: The Air Fry (Phase 1 – Cooking)

  1. Set the air fryer to 350°F (175°C) and cook for 40 minutes . This phase is about cooking the meat through gently without burning the skin.

Step 6: The Air Fry (Phase 2 – Crisping)

  1. After 40 minutes, check the internal temperature. It should be approaching 140°F. Increase the air fryer temperature to 400°F (200°C) and cook for another 10-15 minutes . This high-intensity blast is what gives the skin that incredible crunch and deep golden color. Note: If the skin is browning too quickly at any point, tent loosely with foil.

Step 7: The Rest (Crucial)

  1. Remove the turkey breast from the air fryer when the internal temperature of the thickest part reaches 160°F (71°C) . Do not cut it yet. Transfer the turkey to a cutting board and tent it loosely with aluminum foil. Allow it to rest for 10 to 15 minutes . The temperature will carry over cooking and rise to the safe 165°F mark while the juices redistribute. Cutting early will result in dry meat.

Step 8: Serve

  1. Remove the twine, carve against the grain into ½-inch slices, and serve with the pan juices.
