Instructions

Phase 1: Maceration (Low Heat Intensity)

  1. Prepare Fruit: Thoroughly wash your glacé cherries to remove the syrup and pat them dry. Halve them. Chop your dried apricots. Place all the dried fruits—currants, sultanas, raisins, apricots, and citrus peel (if using)—in a very large bowl.
  2. Warm the Spirit: In a small saucepan over Low Heat, gently warm the dark rum, brandy, or sherry. Do not boil. It should be just warm to the touch.
  3. Macerate: Pour the warm spirit over the fruit mixture. Toss well with tongs to ensure every piece is coated. Press the fruit down slightly. Cover the bowl tightly with plastic wrap and let it sit at warm room temperature for at least 24 hours, or ideally 48 hours. Toss the fruit 1-2 times during this period. The fruit should absorb almost all the liquid.

Phase 2: Create the Muffin Batter (Moderate Intensity)

  1. Oven and Tin: Preheat your oven to 300°F (150°C) , making sure an oven rack is in the center position. Do not use a fan or convection setting. This bake requires the even, gentle heat of conventional settings. Prepare your tin: line the bottom and sides with a double layer of non-stick parchment paper. Additionally, wrap the outside of the metal tin with a thickness of thick brown paper or newspaper, securing it with kitchen twine; this acts as insulation to prevent the exterior from burning over the long bake.
  2. Cream Butter and Sugar: In a large bowl or stand mixer, beat the softened butter and dark muscovado sugar together on medium-high speed until it’s very light, fluffy, and looks like a dark, uniform batter. This will take 3-4 minutes.
  3. Add Eggs: Add the room temperature eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. If the batter begins to curdle, add a tablespoon of your almond flour with the next egg.
  4. Add Wet Flavorings: Mix in the dark molasses, reserved spirit (if any), and vanilla extract until just incorporated.

Phase 3: Build the Dry Structure (Low Intensity)

  1. Combine Dry Ingredients: In your second large bowl, whisk together the almond flour, optional cocoa powder (for depth), baking powder, baking soda, sea salt, cinnamon, nutmeg, allspice, and cloves. Whisk vigorously to ensure all cocoa lumps are removed and spices are evenly distributed.
  2. Fold batter: Gradually fold the dry flour-spice mixture into the wet butter-egg mixture. Use a silicone spatula and work gently—add a third of the dry ingredients, fold until mostly combined, then repeat until all dry ingredients are incorporated. Do not overmix. The batter will be very thick and fragrant.
  3. Folding the Macerated Fruit: This is the critical step. Gently fold the entire bowl of macerated fruit and any remaining spirit into the thick batter. Take your time to ensure the fruit is evenly distributed throughout.

Phase 4: Fill and Bake (Moderate Intensity/Passive Time)

  1. Fill the Tin: Spoon the thick batter into your prepared tin. Tightly fill the corners and use a spatula to create a smooth, even surface. Gently tap the tin on the counter 2-3 times to release any trapped air.
  2. Insulation: Lightly cover the top of the tin with another square of parchment paper with a central hole cut out (about 2 inches / 5cm) to allow some heat to escape.
  3. Bake: Transfer the muffin tin to the preheated conventional oven. Bake at 300°F (150°C) for 3–4 hours .

Phase 5: Cool (Passive Time)

  1. Checking for Doneness: Fudgy muffins are tricky. Use the toothpick test. A toothpick inserted into the center should not come out clean; it should have a few moist, fudgy crumbs attached. If it comes out with wet batter, bake for 2 more minutes. If it comes out clean, the muffins are set but less fudgy.
  2. Initial Cool: Remove the muffin tin from the oven and let it cool in the tin on a wire rack for exactly 15 minutes . Attempting to remove the muffins too early will cause them to break.
  3. Final Cool: Carefully remove the muffins from the tin and transfer them directly to the wire cooling rack to cool completely before eating. This takes at least 1 hour . The flavor intensifies as the muffin cools and sets.
