Instructions
Step 1: Prepare the Ribs (10 Minutes | Low Intensity)
- Begin by removing the thin, silvery membrane from the underside of the rack. This step is non-negotiable for tender ribs; if left on, the membrane will become tough and chewy. Use a butter knife to pry up a corner, then grip it with a paper towel and pull firmly across the rack until it tears away cleanly.
- Once the membrane is removed, rub the ribs all over with the cut half of the lemon. This helps neutralize any surface odors and brightens the flavor. Immediately pat the meat completely dry with paper towels—moisture is the enemy of crispness.
- Using a sharp knife, cut the rack into individual bone-in pieces. This increases the surface area exposed to the hot air, ensuring every edge gets crispy and the meat cooks evenly in a short time.
Step 2: Apply the Dry Rub (5 Minutes | Low Intensity)
- In a large bowl, whisk together all the dry rub ingredients: baking powder, paprika, onion powder, garlic powder, Creole seasoning, bouillon powder, chili powder, black pepper, and salt.
- Add the rib pieces to the bowl, drizzle with the olive oil and white vinegar, and toss thoroughly with your hands (gloves are helpful here). Ensure every single rib is coated in the spice mixture, pressing the rub gently into the meat so it adheres. The baking powder will begin to slightly draw moisture to the surface, which is exactly what you want for that crispy finish .
Step 3: Air Fry (20 Minutes | Medium-High Intensity)
- Preheat your air fryer to 350°F (175°C) for about 3 minutes.
- Arrange the seasoned ribs in the air fryer basket in a single layer . Do not overcrowd them—if the pieces are touching or overlapping, they will steam rather than crisp. If your basket is small, cook in two batches.
- Air fry at 350°F for 20 minutes total , flipping the ribs once at the 10-minute mark using tongs. The ribs are done when they are deeply browned, the exterior looks dry and slightly blistered, and the meat has pulled back slightly from the bone tips. For an extra-crispy finish, you can increase the temperature to 375°F for the final 2–3 minutes, watching closely to prevent burning .
Step 4: Rest and Serve (5 Minutes | No Heat)
- Transfer the ribs to a cutting board and let them rest for 5 minutes. This brief rest allows the juices to redistribute so the meat stays moist. Serve hot, garnished with fresh parsley if desired, alongside slaw, pickles, or roasted vegetables.
