These Greek Chicken Bowls are the meal prep recipe that will completely transform your week. Juicy lemony marinated chicken, fluffy herbed rice, crisp fresh vegetables, Kalamata olives, creamy feta, and the most amazing homemade tzatziki sauce — four incredible bowls that stay fresh all week.
Ingredients
Greek Chicken Marinade:
- 1.5 lbs boneless, skinless chicken thighs
- 3 tbsp olive oil, 3 tbsp lemon juice, 4 cloves garlic minced
- 1 tsp dried oregano, 1 tsp dried thyme, 1/2 tsp smoked paprika
- Salt and black pepper generously
Bowl Components:
- 2 cups cooked rice (seasoned with lemon and parsley)
- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, 1/2 cup crumbled feta
Easy Tzatziki Sauce:
- 1 cup Greek yogurt (full fat)
- 1/2 English cucumber, grated and squeezed dry
- 2 cloves garlic, 1 tbsp fresh dill, 1 tbsp lemon juice, 1 tbsp olive oil
Instructions
Step 1: Marinate Chicken
Whisk marinade, add chicken, marinate minimum 30 minutes or up to 24 hours in fridge.
Step 2: Make Tzatziki
Grate cucumber and squeeze out all liquid. Mix all tzatziki ingredients. Refrigerate.
Step 3: Cook Chicken
Grill or pan-cook over medium-high heat, 6-7 minutes per side until 165°F internal temp. Rest 5 minutes, then slice.
Step 4: Assemble Bowls
Divide rice into 4 containers. Top with chicken, cucumber, tomatoes, onion, olives, and feta. Store tzatziki separately — add just before eating.
