Ingredients

Greek Chicken Marinade:

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil, 3 tbsp lemon juice, 4 cloves garlic minced
  • 1 tsp dried oregano, 1 tsp dried thyme, 1/2 tsp smoked paprika
  • Salt and black pepper generously

Bowl Components:

  • 2 cups cooked rice (seasoned with lemon and parsley)
  • 1 English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, 1/2 cup crumbled feta

Easy Tzatziki Sauce:

  • 1 cup Greek yogurt (full fat)
  • 1/2 English cucumber, grated and squeezed dry
  • 2 cloves garlic, 1 tbsp fresh dill, 1 tbsp lemon juice, 1 tbsp olive oil

Instructions

Step 1: Marinate Chicken

Whisk marinade, add chicken, marinate minimum 30 minutes or up to 24 hours in fridge.

Step 2: Make Tzatziki

Grate cucumber and squeeze out all liquid. Mix all tzatziki ingredients. Refrigerate.

Step 3: Cook Chicken

Grill or pan-cook over medium-high heat, 6-7 minutes per side until 165°F internal temp. Rest 5 minutes, then slice.

Step 4: Assemble Bowls
