Strawberry Matcha Tiramisu gives traditional tiramisu a colorful summer twist.

Instead of coffee and cocoa, delicate ladyfingers are dipped in matcha and layered with mascarpone cream and fresh strawberries.

Ingredients

  • 1½ cups mascarpone
  • 1 cup heavy whipping cream
  • ⅓ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons matcha
  • ¾ cup warm water
  • 18 to 24 ladyfinger biscuits
  • 2 cups fresh strawberries, sliced
  • Extra matcha for dusting

Instructions

Whisk matcha into warm water until no large lumps remain.

Allow the matcha mixture to cool completely.

Meanwhile, add heavy cream and powdered sugar to a large bowl.

Whip until soft peaks begin to form.

In another bowl, briefly beat mascarpone until smooth.

Add vanilla.

Gently fold the whipped cream into the mascarpone.

Dip each ladyfinger very quickly in the cooled matcha. Don’t soak them for too long or they can become mushy.

Arrange the first layer of ladyfingers inside your serving dish.

Spread approximately half of the mascarpone mixture over the biscuits.

Arrange a layer of sliced strawberries over the cream.

Repeat with another layer of matcha-soaked ladyfingers and mascarpone.

Cover and refrigerate for at least 4 hours.

Before serving, decorate with additional strawberries and dust lightly with matcha.
