Instructions

Step 1: Score the Bologna

  1. Take your thick slices of bologna and place them on a cutting board.
  2. Using a sharp paring knife, make three small vertical slits (about 1 inch long) from the outer edge toward the center of each slice. Pro Tip: Scoring prevents the bologna from puffing up like a dome in the middle when it hits the hot pan, ensuring that the entire surface makes direct contact with the hot skillet for an even, crispy crust.

Step 2: Heat the Skillet

  1. Place a cast-iron skillet or heavy frying pan over medium heat .
  2. Add 1 tablespoon of butter and let it melt, swirling it around to coat the bottom of the pan evenly.

Step 3: Fry the Bologna to Perfection

  1. Lay the scored bologna slices flat into the hot skillet in a single layer. You should hear an immediate, satisfying sizzle.
  2. Let them fry undisturbed for 3 to 4 minutes until the bottom develops a deep, caramelized, golden-brown crust.
  3. Flip the slices over using a spatula.
  4. Fry for another 2 to 3 minutes on the second side.
  5. (Optional Melt Step) : If you want the cheese extra gooey, lay a slice of American cheese directly onto each piece of frying bologna during the last minute of cooking, and cover the pan for 30 seconds to trap the heat.

Step 4: Toast the Bread

  1. While the bologna finishes, lightly butter one side of each slice of sandwich bread.
  2. Place the bread slices butter-side down in a separate skillet over medium heat (or wipe out the bologna pan if working in batches) and toast until golden brown, about 2 minutes.

Step 5: Assemble the Sandwich

  1. Lay your toasted bread slices out on a clean board or plate, toasted side facing outward.
  2. Spread a generous layer of yellow mustard (and mayonnaise, if using) onto the interior sides of the bread.
  3. Stack two crispy, cheese-topped fried bologna slices onto the bottom piece of bread.
  4. Add sliced pickles or crispy onions if desired.
  5. Top with the second slice of bread, press down gently, cut diagonally in half, and serve immediately while hot and gooey.
