  • Corn (1/2 cup): Fresh, canned, or frozen.
  • Salsa (1/2 cup): Use your favorite brand.
  • Cumin (1 tsp) & Chili Powder (1 tsp): Warm spices.
  • Shredded Cheese (1/2 cup): Cheddar or Monterey Jack (can omit for vegan).
  • Coriander: Chopped, for garnish.

Step-by-Step Cooking Steps

  1. Prep the Peppers: Preheat your oven to 375°F (190°C). Cut off the tops of the bell peppers and remove the ribs and seeds. Place the peppers upright in an 8×8-inch baking dish.
  2. Make the Filling: In a large bowl, stir together the cooked quinoa, black beans, corn, salsa, cumin, chili powder, coriander, and half of the cheese.
  3. Stuff: Spoon the filling into each bell pepper, pressing down gently to pack it in. Pour 2 tablespoons of water into the bottom of the baking dish (this helps steam the peppers so they get tender).
  4. Bake: Cover the dish with foil. Bake for 30 minutes. Remove the foil, sprinkle the remaining cheese on top of the peppers, and bake uncovered for another 5-10 minutes until the cheese is melted and bubbling.
