Ingredients

  • 2 lbs fresh beets, washed
  • 1 cup apple cider vinegar
  • 3/4 cup water & 1/2 cup sugar
  • 1 tsp salt
  • 1 cinnamon stick & 4 whole cloves

Step-by-Step Instructions

  1. Boil beets in water for 30 minutes until fork tender. Slip skins off under cold water and slice into rounds.
  2. In a saucepan, simmer vinegar, water, sugar, salt, cinnamon stick, and cloves for 5 minutes.
  3. Pack sliced beets into clean glass jars.
  4. Pour hot pickling liquid over beets.
  5. Seal jars and refrigerate for at least 24 hours before serving.
