Crispy, golden, and deliciously seasoned, these Air Fryer Roast Potatoes are the perfect side dish for any meal. They’re faster than oven-roasted potatoes and require less oil, making them a lighter but equally satisfying option. With just a handful of pantry ingredients, you can achieve that irresistible crunch and soft, fluffy center every time — no parboiling needed! Perfect for busy weeknights, Sunday dinners, or holiday spreads, this recipe is a must-have for potato lovers.

Ingredients

  • 1.5 lbs (700g) baby potatoes or Yukon gold/red potatoes, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked or sweet)
  • 1 teaspoon dried rosemary or thyme (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Wash and dry the potatoes. Cut them into roughly equal-sized chunks, about 1 inch in size. If using baby potatoes, you can halve or quarter them depending on size.
  2. In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, paprika, dried herbs (if using), and salt and pepper to taste. Mix well until the potatoes are evenly coated.
  3. Preheat your air fryer to 400°F (200°C) for 3–5 minutes.
  4. Place the seasoned potatoes in the air fryer basket in a single layer. Avoid overcrowding — cook in batches if needed. Air fry at 400°F (200°C) for 20–25 minutes, shaking the basket or turning the potatoes halfway through. Cook until golden, crispy, and tender inside.
  5. Remove from the air fryer and transfer to a serving dish. Garnish with fresh herbs like parsley or chives. Serve hot.

Notes

Storage: Fridge: Store leftovers in an airtight container for up to 4 days. Freezer: Not recommended — they may lose texture. Reheat: Air fry at 375°F (190°C) for 5–6 minutes until heated and crispy again. Flavor Variations: Lemon Herb (add lemon zest and oregano), Spicy Cajun (use Cajun seasoning + chili flakes), Cheesy Garlic (toss with grated Parmesan during the last 5 minutes of cooking), Indian-Inspired (use turmeric, cumin, and garam masala).
