- 1 tablespoon chopped parsley
- 1 tablespoon chopped dill

Instructions
- Trim excess fat or connective tissue from the chicken. If breasts are very thick on one side, gently pound them to even thickness. Pat chicken dry with paper towels.
- Rub olive oil and lemon juice over the chicken. Mix all dry seasonings together and massage into every surface of the chicken.
- Marinate the chicken for a minimum of 20 minutes, or 2–8 hours for better flavor. Avoid marinating in acid for more than 24 hours.
- Cook the chicken using one of the following methods: Pan-sear over medium-high heat for 5–7 minutes per side; Bake at 425°F (220°C) for 18–24 minutes; Grill over medium-high heat for 5–6 minutes per side; or Air fry at 380°F (193°C) for 10–14 minutes, flipping halfway. Ensure internal temperature reaches 165°F (74°C).
- Rest the cooked chicken for 10 minutes before slicing against the grain.
- To make the dressing: In a bowl, whisk together Greek yogurt, mayonnaise, and Dijon mustard until smooth. Add lemon juice, apple cider vinegar, minced garlic, parsley, dill, salt, and black pepper. Whisk thoroughly. Add blended cottage cheese and optional hot sauce. Taste and adjust balance with honey, milk, or extra lemon juice as needed.
- Prepare vegetables: Chop romaine lettuce, dice cucumber, halve cherry tomatoes, shred carrots, dice celery, and slice red onion. Wash and dry greens thoroughly.
- Assemble the bowl: Layer heavier ingredients like chickpeas, cucumbers, and tomatoes at the bottom. Add chicken and toppings in the middle. Top with greens and herbs.
