Ingredients
- 420 g (approx. 3 1/2 cups) unbleached all-purpose flour or bread flour (plus 2 to 3 tbsp extra for dusting)
- 300 ml (1 1/4 cups) lukewarm water (approx. 38°C to 40°C / 100°F to 105°F)
- 7 g (1 standard packet / 2 1/4 tsp) active dry yeast or instant yeast
- 1 tsp (4 g) granulated white sugar or mild honey
- 1.5 tsp (9 g) fine sea salt or non-iodized table salt
- 2 tbsp (30 ml) extra-virgin olive oil (divided: 1.5 tbsp in the dough, 1/2 tbsp to grease the proofing bowl)

Instructions
- Activate the Yeast and Hydrate: In a small bowl or liquid measuring cup, combine the 300 ml of lukewarm water, 1 teaspoon of sugar, and 7 g of yeast. Whisk gently with a fork and let sit undisturbed for 5 to 7 minutes until the surface becomes cloudy, frothy, and releases a sweet, bready aroma. (If using instant yeast, you can skip the wait and mix directly with the dry ingredients).
- Mix the Shaggy Dough: In a large mixing bowl, whisk together the 420 g flour and 1.5 tsp fine sea salt. Make a shallow well in the center. Pour in the foamy yeast mixture and 1.5 tablespoons of extra-virgin olive oil. Stir with a stiff wooden spoon or rubber spatula from the center outward for 60 to 90 seconds until all dry flour patches disappear and a wet, sticky, shaggy dough forms. Do not knead.
- The Bulk Rise: Drizzle the remaining 1/2 tablespoon of olive oil down the inside walls of the bowl. Gently roll the dough ball over so its exterior is lightly coated in oil. Cover loosely with a clean kitchen towel and let rest for 15 minutes.
- Roll the Flatbread Disks: Lightly flour your rolling pin and work surface. Take one dough ball and press it flat. Roll from the center outward until you form a uniform round disk approximately 6 inches (15 cm) in diameter and roughly 1/4-inch (6 mm) thick. Ensure thickness is even. Transfer to a parchment-lined baking sheet and let rest for 5 minutes.
- Air Fry to Golden: Preheat your air fryer to 200°C (400°F) for 3 to 4 minutes. Place one flatbread disk directly onto the hot air fryer basket grate (do not use parchment paper unless weighed down). Bake at 200°C (400°F) for 3 to 4 minutes. Around the 2-minute mark, the bread will puff upward. Flip the flatbread and bake for an additional 2 to 3 minutes until both sides display speckled amber blisters and feel hollow when tapped.
