- ½ cup oat flour (or blended oats)
- 1 scoop (25–30g) vanilla protein powder
- 1 teaspoon baking powder
- ½ teaspoon cinnamon (optional)
- Pinch of salt
- 1 egg (or 2 egg whites)
- ½ cup Greek yogurt (high protein base)
- ¼ cup milk (any type)
- 1–2 tablespoons honey or maple syrup (or sugar-free alternative)
- 1 teaspoon vanilla extract
- ½ cup blueberries
- ½ cup strawberries (chopped)
- ½ cup raspberries
- Sliced almonds or walnuts
- Extra yogurt or protein glaze
- Dark chocolate chips

Instructions
- Preheat oven to 180°C (350°F) and lightly grease a small baking dish.
- In a bowl, mix oat flour, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk egg, yogurt, milk, sweetener, and vanilla.
- Combine wet and dry ingredients until smooth.
- Gently fold in the mixed berries.
- Pour the batter into the baking dish.
- Add toppings if desired.
- Bake for 25–30 minutes until set and golden on top.
- Let cool slightly before serving.
