Ingredients

  • ½ cup oat flour (or blended oats)
  • 1 scoop (25–30g) vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon (optional)
  • Pinch of salt
  • 1 egg (or 2 egg whites)
  • ½ cup Greek yogurt (high protein base)
  • ¼ cup milk (any type)
  • 1–2 tablespoons honey or maple syrup (or sugar-free alternative)
  • 1 teaspoon vanilla extract
  • ½ cup blueberries
  • ½ cup strawberries (chopped)
  • ½ cup raspberries
  • Sliced almonds or walnuts
  • Extra yogurt or protein glaze
  • Dark chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F) and lightly grease a small baking dish.
  2. In a bowl, mix oat flour, protein powder, baking powder, cinnamon, and salt.
  3. In another bowl, whisk egg, yogurt, milk, sweetener, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Gently fold in the mixed berries.
  6. Pour the batter into the baking dish.
  7. Add toppings if desired.
  8. Bake for 25–30 minutes until set and golden on top.
  9. Let cool slightly before serving.
