Ingredients
For the Potatoes
- 2½ pounds baby potatoes or Yukon Gold potatoes
- 1 large yellow onion, thinly sliced
- 1 packet Lipton Onion Soup & Dip Mix
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- ½ cup chicken broth or vegetable broth
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ¼ teaspoon dried thyme
- ¼ teaspoon dried parsley
- Salt, to taste
- 2 tablespoons fresh parsley, chopped, for garnish
Optional Additions
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 4 slices cooked and crumbled bacon
- A pinch of red pepper flakes
- 1 tablespoon fresh rosemary
- 2 tablespoons sour cream for serving

Instructions
Step 1: Prepare the Slow Cooker
- Lightly grease the inside of a 5- to 6-quart slow cooker with a little olive oil or butter. This helps prevent sticking and makes cleanup easier.
Step 2: Add the Potatoes
- Place the prepared potatoes into the slow cooker and spread them into an even layer.
- Add the sliced onions over the potatoes. Don’t worry if the onions seem like a lot—they will shrink considerably as they cook.
Step 3: Add the Seasoning
- Sprinkle the Lipton Onion Soup & Dip Mix evenly over the potatoes and onions.
- Add the garlic powder, black pepper, paprika, thyme, and parsley.
- Because onion soup mix can already contain a good amount of salt, it’s best to wait before adding additional salt. You can taste and adjust near the end.
Step 4: Add Butter and Broth
- Pour the melted butter and olive oil over everything.
- Then slowly pour the broth around the potatoes.
- The combination of butter, onions, and savory seasoning creates the delicious flavor that makes this recipe so comforting.
Step 5: Slow Cook
- Cover the slow cooker with its lid.
- Cook on LOW for approximately 5–7 hours , or until the potatoes are fork-tender.
- You can also cook them on HIGH for approximately 2½–4 hours , depending on the size of your potato pieces and the heat of your slow cooker.
- Try not to lift the lid too frequently because every time the lid is removed, heat escapes and cooking takes longer.
Step 6: Check for Tenderness
- When the potatoes can easily be pierced with a fork, they’re ready.
- Taste one carefully and adjust the seasoning if needed.
- If you want slightly browned edges, transfer the cooked potatoes to a baking dish and place them under a hot broiler for a few minutes. Watch them closely until the edges become golden.
Step 7: Garnish and Serve
- Sprinkle freshly chopped parsley over the potatoes just before serving.
- For an extra-indulgent finish, add a little Parmesan or cheddar cheese while the potatoes are still hot and allow it to melt.
