Instructions

Step 1: Craft the Zesty Citrus Simple Syrup

  1. Combine 1 cup of sugar , 1 cup of filtered water , and 1 tablespoon of lime zest (plus ginger slices if using) in a small saucepan over medium heat.
  2. Stir continuously until the sugar completely dissolves. Bring the mixture to a gentle simmer for 1 to 2 minutes.
  3. Remove from heat immediately. Let the syrup steep for 15 minutes off the stove. This allows the essential oils in the lime zest to infuse deeply into the syrup.
  4. Strain the syrup through a fine-mesh sieve into a heat-safe glass measuring cup or jar to remove the zest particles and ginger. Allow to cool completely or chill in the refrigerator.

Step 2: Fresh-Squeeze the Limes

  1. Roll your limes firmly against a countertop using the palm of your hand before cutting; this breaks down internal membranes to yield maximum juice.
  2. Slice limes in half and extract 1 cup of fresh lime juice . Strain out any seeds while keeping a bit of the natural pulp if desired.

Step 3: Mix the Beverage Base

  1. In a large glass pitcher (at least 2-quart capacity), add the chilled Zesty Citrus Syrup , fresh lime juice , and 2 cups of guava puree/nectar .
  2. Whisk thoroughly until the dense guava puree incorporates seamlessly into the liquid base.
  3. Pour in 3 cups of cold filtered water . Stir vigorously. Taste the mixture: if you prefer a lighter, less concentrated drink, add the additional 4th cup of cold water.

Step 4: Chill and Serve

  1. Place the pitcher in the refrigerator for at least 30 minutes to allow the flavors to harmonize and drop to optimum drinking temperature.
  2. If rimming glasses, rub a lime wedge around the rim of highball glasses and dip into coarse sea salt or chili-lime spice.
  3. Fill each glass to the brim with ice.
  4. Pour the Zesty Guava Limeade over the ice.
  5. Garnish each glass with a fresh lime wheel, a sprig of slapped fresh mint (slapping releases aromatic oils), and fresh guava pieces.
