Instructions

Step 1: Prep & Dry the Wings

  1. The secret to ultra-crispy skin in an air fryer is removing moisture. Moisture creates steam, and steam leads to soggy skin.
  2. Remove the split wings from their packaging.
  3. Pat every wing thoroughly dry using paper towels. Replace wet towels as needed until the wings feel completely dry to the touch.

Step 2: Season & Coat

  1. In a large mixing bowl, combine the baking powder, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
  2. Drizzle the oil over the dried wings and toss well to lightly coat them.
  3. Sprinkle the spice and baking powder mixture evenly over the wings. Toss vigorously until every piece is uniformly coated in a thin layer of dry rub.
  4. (Optional Step for Extra Crunch): Let the seasoned wings sit on a wire rack at room temperature for 15–20 minutes to allow the baking powder to break down the proteins on the skin surface.

Step 3: Arrange in the Air Fryer

  1. Preheat your air fryer to 360°F (180°C) for 3–5 minutes.
  2. Lightly coat the air fryer basket with non-stick cooking spray or brush with a touch of oil.
  3. Lay the wings in a single layer in the basket. Ensure they are not overlapping or stacked. If necessary, cook in two separate batches to avoid crowding.

Step 4: The Two-Stage Air Fryer Cook

  1. Stage 1 (Medium Intensity – 360°F / 180°C): Set the timer for 12 minutes . Cook undisturbed. The fat under the skin will begin to render out.
  2. Flip & Crank Heat: After 12 minutes, open the basket and use tongs to flip each wing over.
  3. Stage 2 (High Intensity – 400°F / 200°C): Increase the temperature to 400°F (200°C) and set for another 8 to 10 minutes . Flip once more around the 5-minute mark so both sides turn deep golden brown and crisp up evenly.

Step 5: Toss or Serve Crisp

  1. Once the wings reach an internal temperature of at least 165°F (74°C) (ideally 175°F–180°C for dark meat tenderness) and look golden-crisp, remove them from the air fryer.
  2. If serving dry-rub style: Transfer immediately to a serving basket with lemon wedges or dipping sauce on the side.
  3. If tossing in glaze: Whisk the hot sauce, melted butter, honey, and Worcestershire sauce together in a bowl. Add the hot wings into the bowl immediately after cooking and toss lightly to coat so they stay crisp.
