Step 1: Prep and Tenderize the Chicken
- Place chicken breasts between two sheets of parchment paper or plastic wrap. Using a rolling pin or meat mallet, gently pound any uneven thicker parts until the cutlets are a uniform 1/2-inch thickness. Uniform thickness prevents thin edges from drying out while waiting for centers to cook.
- Pat the cutlets thoroughly dry with paper towels. Residual surface moisture prevents the flour layer from adhering evenly.
- Season both sides with 1 tsp sea salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder. Let rest at room temperature for 10 minutes.
Step 2: Set Up the Three-Station Dredge
- Shallow Dish 1: Whisk together the cornstarch (or flour), smoked paprika, and onion powder.
- Shallow Dish 2: Beat the two eggs, milk (or pickle juice), and Dijon mustard together until fully blended with no visible egg whites.
- Shallow Dish 3: Combine panko, Italian breadcrumbs, grated Parmesan, Italian herbs, and cayenne. Drizzle 1 tablespoon of oil into the mixture and rub it through the breadcrumbs with your fingers until lightly coated.
Step 3: Dredge with Precision
- Use your left hand for “dry” and right hand for “wet” to avoid batter clumping on your fingers: Dredge a cutlet into Dish 1 , shaking off all excess powder until only a fine film remains.
- Submerge into Dish 2 (Egg Wash) , letting excess egg drip back into the bowl for 3 seconds.
- Lay into Dish 3 (Crumb Mixture) . Press firmly with your dry hand so the crumbs embed into the cutlet. Flip and press down again on the reverse side.
- Place the breaded cutlets on a wire rack for 5 minutes. This resting phase hydrates the proteins in the egg and prevents the crust from sloughing off during air frying.
Step 4: Air Fry to Golden Crispness
- Preheat: Preheat your air fryer to 390°F (200°C) for 3 to 4 minutes.
- Load the Basket: Lightly spray the air fryer basket with avocado oil spray (avoid propellent aerosol sprays which degrade non-stick coatings). Lay the cutlets in a single layer with at least 1/2 inch of space between each piece. Cook in two batches if necessary.
- Initial Cook: Generously mist the top surfaces of the chicken with cooking oil spray. Cook at 390°F (200°C) for 6 minutes .
- Flip & Finish: Open the basket, flip each cutlet with tongs, and give the newly exposed side a light mist of oil. Cook for an additional 5 to 7 minutes until the crumb is deep golden-brown and an instant-read meat thermometer reads 165°F (74°C) in the thickest section.
- Rest: Transfer to a wire cooling rack and allow the meat to rest for 3 to 4 minutes before serving. Placing hot breaded chicken onto flat ceramic plates immediately causes steam condensation that ruins bottom crispness.
