Equipment

  • Basket-style or toaster-oven air fryer (minimum 4-quart capacity)
  • Instant-read digital meat thermometer (essential for precision)
  • Kitchen tongs (silicone or stainless steel)
  • Cutting board with juice groove
  • Paper towels

Ingredients

The Steak & Dry Rub

  • Beef Steak: 2 thick-cut steaks, about 10–12 oz (280–340 g) each, 1.25 to 1.5 inches thick (Ribeye for maximum marbling; NY Strip or Top Sirloin for a leaner bite)
  • High-Smoke Point Oil: 1 tablespoon avocado oil or beef tallow (avoids smoking at high convection temperatures)
  • Coarse Kosher Salt: 1 teaspoon (or flaky sea salt)
  • Coarsely Cracked Black Pepper: 1 teaspoon
  • Granulated Garlic Powder: 1/2 teaspoon
  • Smoked Paprika or Onion Powder: 1/4 teaspoon (optional, adds color depth)

Compound Garlic-Herb Butter

  • Unsalted Butter: 3 tablespoons (softened to room temperature)
  • Fresh Garlic: 2 cloves, finely minced or grated into a paste
  • Fresh Rosemary: 1/2 teaspoon, finely minced
  • Fresh Thyme Leaves: 1/2 teaspoon, finely minced
  • Fresh Italian Parsley: 1 teaspoon, finely chopped
  • Flaky Sea Salt (such as Maldon): A generous pinch to finish

Cooking Intensities, Convection Stages & Target Temperatures

  • Preheat Phase (Maximum Intensity – 400°F / 200°C): 5 minutes. Pre-charging the air fryer basket with intense radiant heat allows the meat to sizzle immediately upon contact, preventing grey, boiled-looking edges.
  • First Side Sear (High Convection – 400°F / 200°C): 5 to 7 minutes. Rapidly dehydrates the seasoned surface and begins rendering the outer fat ribbon.
  • Flip & Finish Phase (High Convection – 400°F / 200°C): 3 to 5 minutes. Balances heat distribution and brings the internal core to your desired doneness.
  • Carryover Resting Phase (Ambient Heat Off): 5 to 7 minutes. Juices redistribute from the center back through the muscle fibers while the core temperature climbs an additional 3°F–5°F.

Instructions

1. Temper the Meat

  1. Remove the steaks from the refrigerator 20 to 30 minutes before cooking. Placing ice-cold meat into an air fryer drops the basket’s ambient air temperature instantly, causing the steak to steam rather than sear.

2. Whip the Herb Compound Butter

  1. While the steaks temper, combine the softened butter, minced garlic, rosemary, thyme, parsley, and a pinch of salt in a small bowl. Mix thoroughly with a fork until homogenous. Roll into a small log using parchment paper or simply leave at room temperature so it spreads easily.

3. Dry and Season

  1. Use paper towels to pat both steaks thoroughly dry on all sides. Moisture prevents proper browning. Rub each steak with 1/2 tablespoon of avocado oil to help the seasoning adhere. Generously season every side—including the fatty edges—with the coarse kosher salt, cracked black pepper, garlic powder, and smoked paprika.

4. Pre-Heat the Air Fryer

  1. Set your air fryer to 400°F (200°C) and run it empty for 5 minutes . The grate needs to be piping hot to establish bottom sear marks.

5. Sear Side One

  1. Place the steaks in the air fryer basket in a single layer, ensuring at least an inch of clearance between them so the air can circulate freely. Cook at 400°F (200°C) for 6 minutes .

6. Flip and Monitor

  1. Open the basket, flip the steaks using tongs, and immediately insert a digital meat thermometer into the thickest center part of the meat (avoiding bone or pockets of pure fat). Continue cooking at 400°F (200°C) for an additional 3 to 5 minutes , checking the internal temp at the 3-minute mark until it hits your desired pull point (130°F / 54°C for medium-rare).

7. Rest with Butter

  1. Transfer the steaks immediately to a warm cutting board or plate. Place a generous dollop (about 1 to 1.5 tablespoons) of the garlic herb butter directly onto the sizzling hot crust of each steak. Tent loosely with a sheet of aluminum foil and let the meat rest undisturbed for 5 to 7 minutes . The butter will melt into the resting juices, forming a rich pan sauce.

8. Carve and Serve

  1. Slice the steak against the natural grain into 1/2-inch strips. Spoon any accumulated juices and melted garlic butter from the board over the sliced meat. Top with a final sprinkle of flaky sea salt.
