Ingredients

  • Bread: 4 thick slices of sturdy artisanal bread (sourdough, brioche, or Italian country loaf work best)
  • Cheese: 8 ounces fresh mozzarella cheese, sliced into even rounds (or shredded low-moisture mozzarella for maximum melt)
  • Tomatoes: 1 large ripe Roma tomato or heirloom tomato, sliced into 1/4-inch rounds
  • Herbs: 8 to 10 fresh basil leaves, washed and thoroughly patted dry

Instructions

Step 1: Preheat and Prepare the Air Fryer

  1. Begin by preheating your air fryer to 360°F (180°C) for about 3 minutes. A hot air fryer ensures that the bread starts crisping immediately upon contact, preventing it from drying out before the cheese melts.

Step 2: Assemble the Sandwiches

  1. Lay all four slices of bread out on a clean cutting board.
  2. Evenly spread the softened butter (or mayonnaise) across one side of each slice. This will become the exterior crust that turns golden brown in the basket.
  3. Flip two of the slices over so the buttered side faces down.
  4. Layer half of the mozzarella cheese slices onto the unbuttered sides. The cheese acts as a moisture barrier, keeping the bread from getting soggy from the tomatoes.
  5. Add a neat layer of sliced tomatoes on top of the cheese. Season the tomatoes lightly with a pinch of flaky sea salt and freshly cracked black pepper.
  6. Tuck the fresh basil leaves directly over the seasoned tomatoes.
  7. Top with the remaining mozzarella cheese slices (this helps glue the top slice of bread to the filling).
  8. Finish each sandwich with the remaining slices of bread, with the buttered side facing up .

Step 3: Air Fry to Golden Perfection

  1. Carefully transfer the assembled sandwiches into the preheated air fryer basket in a single layer, ensuring there is a little space between them for proper air circulation. (Tip: If your air fryer is smaller, cook them one at a time).
  2. Cook at 360°F (180°C) for 3 minutes .
  3. Pause, open the basket, and use a spatula to carefully flip each sandwich over.
  4. Continue cooking for another 3 to 5 minutes , or until the bread is deeply golden brown and the mozzarella is completely melted and bubbling.

Step 4: The Finishing Touch and Serving

  1. Remove the sandwiches from the air fryer and let them rest for 1 to 2 minutes so the molten cheese can set slightly.
  2. Gently lift the top slice of bread and drizzle the balsamic glaze directly over the warm tomatoes and basil.
  3. Slice the sandwiches diagonally with a sharp serrated knife and serve immediately while hot and stretchy.
