Ingredients
The Chicken
- 1.5 lbs (680g) Boneless, Skinless Chicken Breasts (or Thighs): We recommend chicken thighs for a juicier bite, but breasts work well if not overcooked. Cut into 1-inch cubes.
- 1 tbsp Olive Oil or Avocado Oil: Just enough to help the seasoning adhere and promote browning.
The Breading Station (The “Crunch” Factor)
- 1/2 cup Panko Breadcrumbs: Japanese breadcrumbs are lighter and flakier than standard breadcrumbs, creating a superior crunch.
- 1/4 cup Grated Parmesan Cheese: Adds a savory, umami punch and helps the crust crisp up.
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Smoked Paprika: For a depth of flavor and a beautiful color.
- 1/2 tsp Kosher Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Cayenne Pepper (Optional): For those who like a little heat.
The Binder
- 1 Large Egg
- 1 tbsp Water
For Serving (Optional)
- Ranch dressing, honey mustard, or Sriracha mayo.
- Fresh parsley, chopped (for garnish).

Instructions
Step 1: The Prep (Intensity: Low)
- Start by preparing your workspace. You will need three shallow bowls (or plates) for the breading station.
- Bowl 1: Whisk the egg and water together until frothy.
- Bowl 2: Combine the Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, pepper, and cayenne (if using). Mix well.
- Bowl 3: Place your cubed chicken.
- Pro Tip: Pat your chicken cubes dry with a paper towel before starting. Excess moisture is the enemy of crispiness.
Step 2: The Dredge (Intensity: Medium)
- Working in small batches (about 5-6 cubes at a time), toss the chicken in the egg mixture. Let the excess drip off.
- Transfer the egg-coated chicken to the breadcrumb mixture.
- Press the crumbs firmly onto the chicken to ensure they stick.
- Place the breaded bites on a plate or wire rack. Do not stack them.
- Note: If you are cooking for a crowd, you can bread all the chicken and refrigerate it for up to 2 hours before air frying.
Step 3: The Air Fry (Intensity: High Heat)
- Preheat your air fryer to 400°F (200°C) for 3 minutes. Preheating is crucial for achieving that immediate sear.
- Lightly spray the air fryer basket with cooking oil (avocado or coconut oil is best).
- Place the chicken bites in the basket in a single layer . They should not touch each other. Depending on the size of your air fryer, you may need to cook in two batches.
- Spray the tops of the chicken bites lightly with oil. This helps the breading turn golden rather than powdery.
- Cooking Time & Intensity:
- First Round: Cook at 400°F (200°C) for 6 minutes .
- The Flip: At the 6-minute mark, pull the basket out. Shake it gently or use tongs to flip each bite. This ensures even browning on all sides.
- Second Round: Cook for another 5 to 6 minutes at 400°F (200°C).
- Internal Temperature Check: The chicken is done when the internal temperature reaches 165°F (74°C) . If you don’t have a meat thermometer, cut one bite open; the meat should be white and opaque, not pink.
Step 4: The Rest and Serve
- Once cooked, transfer the chicken bites to a serving platter. Let them rest for 2 minutes. This allows the juices to redistribute and the crust to set.
- Garnish with fresh parsley and serve immediately with your favorite dipping sauces.
