Phase 1: Preparation (Intensity: Low)

  1. 1. Clean the Hearts: This is the most crucial step. While some cultures eat the hearts whole, the top of the heart often retains a bit of connective tissue, fat, and sometimes blood clots. Take each heart and use a sharp paring knife to trim off the white fat cap and any visible veins or arteries at the top. You can either leave the heart whole or slice it in half lengthwise (butterflied). Slicing them in half increases the surface area for seasoning and ensures faster, more even cooking, but whole hearts are juicier. Rinse them thoroughly under cold running water.
  2. 2. Create the Marinade: In a medium-sized mixing bowl, whisk together the soy sauce, Worcestershire sauce, minced garlic, smoked paprika, onion powder, black pepper, cayenne, and lemon juice. Whisk vigorously to emulsify the flavors.
  3. 3. Marinate: Add the cleaned chicken hearts to the bowl. Toss well to ensure every heart is coated. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow them to marinate for at least 30 minutes. For the best flavor penetration, let them sit for 2 to 4 hours. Phase 2: The Air Fryer (Intensity: Medium)

  3. 9. The Second Air Fry (Cook Time: 6–8 Minutes): Return the basket to the air fryer. Increase the temperature to 400°F (204°C) . Cook for another 6 to 8 minutes. This high-heat blast is what creates the “crust.”
  4. Note on Texture: Chicken hearts are chewy by nature. If you prefer them tender, cook closer to the 6-minute mark on the second round. If you like them crispy and jerky-like, push it to 8–9 minutes.
  5. 10. The Internal Temperature Check: Chicken hearts are safe to eat when the internal temperature reaches 165°F (74°C) . However, because they are muscle meat, they are best eaten when cooked through (usually around 175°F/80°C) to ensure the texture isn’t rubbery. They should be dark brown on the outside and firm to the touch.

Phase 4: Resting & Serving (Intensity: Low)
