Ingredients

For the Chocolate Loaf:

Instructions

Step 1: Prep the Pan & Air Fryer

  1. Lightly grease your loaf pan with non-stick cooking spray or softened butter.
  2. Line the bottom and long sides with parchment paper, leaving a slight overhang (“sling”) on the sides to make lifting the cake out effortless.
  3. Preheat your air fryer to 320°F (160°C) for 3 to 5 minutes. Air fryers bake quickly; starting at a slightly lower baking temperature ensures the center bakes fully before the top over-browns.

Step 2: Combine the Dry Ingredients

  1. In a medium bowl, whisk together the all-purpose flour, sifted cocoa powder, granulated sugar, baking powder, baking soda, and fine sea salt until evenly distributed. Sifting the cocoa powder is crucial here to eliminate stubborn lumps.

Step 3: Whisk the Wet Ingredients

  1. In a separate bowl, whisk together the eggs, milk, oil (or melted butter), and vanilla extract until completely smooth and emulsified.
  2. Pour the wet mixture into the dry ingredients. Using a silicone spatula, gently fold the batter just until the flour streaks disappear. Avoid vigorous over-mixing, which leads to a dense, rubbery crumb.

Step 4: Bloom the Cocoa & Fold in Chips

  1. Gently pour in the hot coffee (or boiling water). Whisk smoothly until the batter is glossy and uniform. The batter will be relatively thin—this is normal and ensures a moist, tender sponge.
  2. Fold in the flour-dusted mini chocolate chips, reserving 1 tablespoon to sprinkle on top if desired.

Step 5: Air Fry to Perfection

  1. Pour the batter into the prepared loaf pan, filling it no more than two-thirds full to allow ample room for rising. Smooth the top with your spatula.
  2. Place the pan into the preheated air fryer basket.
  3. Bake at 320°F (160°C) for 35 to 40 minutes .
  4. Browning check: At the 25-minute mark, open the air fryer briefly. If the top has set and is turning deep brown, loosely tent a piece of aluminum foil over the top of the pan to prevent the crust from over-browning while the center finishes baking.
  5. Check doneness by inserting a toothpick or skewer into the center of the loaf. It should come out clean or with a few moist crumbs attached, but no wet batter.

Step 6: Cool & Unmold

  1. Carefully remove the loaf pan from the air fryer basket using oven mitts.
  2. Set the pan on a wire cooling rack and allow it to rest for 15 minutes.
  3. Use the parchment paper sling to lift the cake out of the pan. Let it cool completely on the rack (about 30 to 45 minutes) before applying the glaze.

Step 7: Glaze and Serve

  1. While the cake cools, prepare the glaze: Place the chocolate chips, heavy cream, and butter in a small heatproof bowl. Microwave in 20-second bursts, stirring in between, until completely melted and glossy.
  2. Pour the glaze evenly over the cooled loaf, letting it drip naturally down the sides.
  3. Finish with a sprinkle of flaky sea salt or remaining mini chocolate chips. Let the glaze set for 10 minutes, slice with a sharp chef’s knife, and serve.
