Ingredients

For the Pastry

  • 2½ cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup cold shortening
  • 6–8 tablespoons ice water

For the Filling

  • ½ pound beef steak or ground beef, finely diced
  • 1 medium potato, peeled and diced small
  • ½ cup rutabaga, diced small
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon fresh thyme
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon butter, cut into small pieces

For Assembly

  • 1 egg, beaten
  • Light cooking spray

Instructions

Step 1: Prepare the Pastry

  1. In a large mixing bowl, combine the flour and salt. Add the cold butter and shortening. Use a pastry cutter or fork to blend the fats into the flour until the mixture resembles coarse crumbs.
  2. Slowly add ice water, one tablespoon at a time, mixing gently until the dough comes together. Do not overwork the dough. Shape it into a disc, wrap in plastic wrap, and refrigerate for at least 20 minutes.
  3. Chilling the dough helps create a flaky crust and makes it easier to roll out later.

Step 2: Make the Filling

  1. In another bowl, combine the diced beef, potatoes, rutabaga, and onion. Add salt, pepper, garlic powder, thyme, and Worcestershire sauce. Mix thoroughly until everything is evenly coated with seasoning.
  2. The vegetables should be diced very small so they cook fully inside the air fryer during the shorter cooking time.

Step 3: Roll Out the Dough

  1. Remove the chilled dough from the refrigerator and divide it into four equal portions. On a lightly floured surface, roll each piece into an 8-inch circle.
  2. Try to keep the thickness even so the pasties cook uniformly.

Step 4: Fill the Pasties

  1. Place a generous scoop of filling onto one half of each dough circle, leaving a small border around the edge. Add a few tiny pieces of butter over the filling for extra richness.
  2. Fold the dough over to create a half-moon shape. Press the edges together firmly, then crimp with a fork or twist the edge traditionally for a decorative finish.

Step 5: Add Egg Wash

  1. Brush the tops of the pasties with beaten egg. This gives them a shiny, golden finish once cooked.
  2. Cut a tiny slit in the top of each pasty to allow steam to escape during cooking.

Step 6: Air Fry the Pasties

  1. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  2. Lightly spray the air fryer basket with cooking spray. Place the pasties in the basket in a single layer, leaving space between them for airflow. Depending on the size of your air fryer, you may need to cook them in batches.
  3. Cook at 375°F (190°C) for 16–18 minutes, flipping gently halfway through cooking if needed. The crust should be deep golden brown and crisp.
  4. The internal temperature of the beef should reach 160°F (71°C).
