- 2. Draw Out Surface Moisture
- Place the cut potatoes on clean paper towels, cut-side down, for 3 to 5 minutes. Removing excess moisture from the potato surfaces ensures they blister rather than steam during the initial heat blast.
- 3. Season Thoroughly
- Transfer the halved potatoes to a dry mixing bowl. Drizzle with 1.5 tablespoons of olive oil. In a separate ramekin, mix together the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried oregano. Scatter the spice mixture evenly over the potatoes and toss vigorously with clean hands or a spoon until each cut edge and curved skin is coated.
- 4. Preheat the Air Fryer

- 6. Shake and Rotate
- At the 10-minute mark, pull the basket out and shake it briskly to dislodge potatoes from the wire rack, redistributing the edges to direct heat paths.
- 7. Second Stage Cooking (Blister & Crisp)
- Turn the air fryer intensity up to 400°F (200°C) and cook for another 4 to 6 minutes . This high-heat burst crisps up the seasoned crust and darkens the cut edges to a deep golden amber. Check tenderness by inserting a fork or paring knife into the thickest potato—it should slide in with zero resistance.
- 8. Garnish and Rest
- Transfer the hot potatoes directly onto a serving dish. Allow them to rest for 90 seconds so the internal moisture redistributes and the outer shell sets into a firm crunch. Scatter finely chopped fresh parsley, flaky sea salt, or grated Parmesan over the top right before serving.
