  • 1/2 cup all-purpose flour (substitute with gluten-free 1-to-1 baking flour if needed)
  • 1/4 cup cornstarch (the secret ingredient for extra crunch)
  • 2 large eggs , beaten

The Spice Blend

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (or sweet paprika for a milder flavor)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for a subtle kick)

Instructions

Step 1: Preheat and Prep

  1. Preheat your air fryer to 380°F (193°C) for 5 minutes. Preheating ensures the chicken starts sizzling immediately upon contact, preventing it from sticking to the basket and locking in the juices.
  2. Pat the chicken completely dry using paper towels. Removing excess surface moisture is crucial for achieving a crispy crust.
  3. Lightly rub all sides of the chicken thighs with the olive oil .

Step 2: Mix the Dry Coatings

  2. In a separate shallow bowl, whisk the two eggs until smooth.

Step 3: Bread the Chicken

  1. Work with one chicken thigh at a time. Dredge the chicken in the seasoned flour mixture, shaking off any excess.
  2. Dip the floured chicken into the beaten eggs, allowing any excess egg to drip back into the bowl.

  2. Arrange the chicken thighs in the air fryer basket in a single layer , leaving space between each piece to allow the hot air to circulate freely. Do not overcrowd; cook in batches if your air fryer is on the smaller side.
  3. Cook at 380°F (193°C) for 8 minutes .
  4. Carefully open the basket, flip each chicken thigh over, and mist any dry spots with a little cooking spray.
  5. Continue cooking for another 8 to 10 minutes , or until the internal temperature reaches 165°F (74°C) on a digital meat thermometer inserted into the thickest part of the meat, and the exterior is golden brown and crispy.

Step 5: Rest and Serve

  1. Transfer the cooked chicken thighs to a wire cooling rack set inside a baking sheet (this prevents the bottom from getting soggy from steam).
