Instructions
Step 1: Prepare the Onion
- Peel the onion and cut off the stem end, leaving the root end intact. This is the key to creating beautiful “petals.” Cut the onion in half through the root. Then, cut each half into quarters, again, keeping the root end intact. You should now have 4 wedges. Gently separate the layers of each wedge to create individual petals. You’ll get a variety of sizes, which is perfect. Set them aside.
Step 2: Set Up Your Breading Station
- This is the secret to an ultra-crunchy crust. You’ll need three shallow bowls.
- Bowl 1 (Seasoned Flour): In the first bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Bowl 2 (Egg Wash): In the second bowl, whisk together the buttermilk and egg until smooth.
- Bowl 3 (Panko Coating): In the third bowl, combine the panko breadcrumbs and Parmesan cheese (if using).
Step 3: The Double-Dredge Method
- This is the most important step for maximum crispiness.
- Take an onion petal and dredge it in the seasoned flour mixture. Shake off any excess.
- Dip the floured petal into the egg wash, allowing any excess to drip back into the bowl.
- Finally, press the petal into the panko mixture, ensuring it’s fully and evenly coated. Gently press the breadcrumbs onto the petal to help them adhere.
- Place the breaded petal on a wire rack or a large plate. Repeat with the remaining petals.
- Pro Tip: For an even thicker, crunchier crust, you can do a second round of dipping: dip the panko-coated petal back into the egg wash and then back into the panko. This creates a truly spectacular crust.
Step 4: Preheat and Prep the Air Fryer
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes. While it’s preheating, lightly spray the basket with cooking spray. Arrange the breaded onion petals in a single layer in the air fryer basket. It’s important not to overcrowd them, as this will prevent them from getting crispy. Work in batches if necessary.
Step 5: Air Fry to Golden Perfection
- Lightly spray the tops of the onion petals with cooking spray. This helps them achieve that gorgeous golden-brown color.
- Air fry at 375°F (190°C) for 10-12 minutes, flipping them halfway through the cooking time. They are done when they are deep golden brown and the crust is shatteringly crisp.
Step 6: Make the Dipping Sauce
- While the onions are cooking, make the sauce. In a small bowl, combine the mayonnaise, ketchup, hot sauce, Worcestershire sauce, and smoked paprika. Stir until smooth and well combined.
Step 7: Serve Immediately
- Remove the crispy onion petals from the air fryer and season with a pinch of salt right away. Serve them hot with the spicy mayo dipping sauce.
