Equipment
- Air Fryer (Basket-style or oven-style, 3-quart capacity or larger).
- Round drinking glass, biscuit cutter, or wide mason jar ring (approx. 2.5 to 3 inches wide).
- Flat silicone or metal spatula.
- Butter knife or silicone basting brush.
- Small ramekin or prep bowl (for cracking the egg safely).
- Perforated air fryer parchment paper liner (optional, helps prevent egg whites from dripping through wire baskets).
Ingredients
- Hearty Sliced Bread: 2 thick slices (approx. 3/4-inch to 1-inch thick) of sourdough, rustic country white, brioche, or challah. Avoid ultra-thin commercial sandwich bread, which tends to collapse under the weight of a whole egg.
- Fresh Large Eggs: 2 cold large eggs (fresh eggs have tighter albumin/whites, preventing leaks).
- Unsalted Butter: 1.5 tablespoons (approx. 20 g), softened to room temperature (or extra virgin olive oil/mayonnaise).
- Fine Sea Salt: 1/4 teaspoon, to taste.
- Freshly Cracked Black Pepper: 1/4 teaspoon.
- Sharp Cheddar or Shredded Mozzarella (Optional): 2 tablespoons, finely grated.
- Fresh Chives or Scallions: 1 tablespoon, finely minced.
- Smoked Paprika or Red Pepper Flakes (Optional Garnish): A light pinch for color and gentle heat.
Ingredient Selection & Bread Engineering
- Bread Density Matters: Standard sandwich bread is light, airy, and thin (roughly 1/2 inch). When you cut a hole in thin bread and drop in an egg, the egg volume exceeds the bread’s height, spilling out across the air fryer basket. Opt for a hearty, artisan sourdough boule, a sturdy farmhouse loaf, or brioche sliced at least 3/4-inch thick. The dense crumb holds its structure and acts as a sturdy reservoir wall for the egg.
- The Well vs. The Hole: You have two structural options when shaping the bread: The Complete Hole: Stamping a complete circle out of the bread creates a window where the egg rests directly on the cooking surface. If using this method, line your basket with parchment paper to prevent liquid whites from dripping through the bottom grate.
- The Compressed Well (Recommended): Instead of cutting all the way through, use the flat bottom of a glass or the back of a spoon to firmly press down the center crumb into a deep, compact pocket while leaving the bottom crust intact. This creates an impermeable “nest” that catches every drop of egg white without requiring parchment paper.

Instructions
Step 1: Prep the Bread Wells
- Place the 2 slices of thick artisan bread on a clean cutting board.
- Take the bottom of a wide glass or a 2.5-inch round biscuit cutter and press down firmly into the center of each slice.
- If using the compressed well method, press down firmly until the crumb is squashed flat against the bottom crust, creating a deep pocket. If using the cutout method, twist the cutter to remove the inner circle of bread completely (reserve the cutout bread disc to toast alongside the slice as a dipping soldier).
Step 2: Butter the Slices
- Generously spread softened butter (or a thin layer of mayonnaise) across the top surface, edges, and inner walls of each bread slice. Buttering the inner wall seals the bread crumb and keeps the raw egg white from soaking into the bread and making it soggy before it sets.
Step 3: Preheat the Air Fryer
- Preheat your air fryer to 350°F (175°C) for 3 minutes. Preheating ensures the cooking surface is warm the instant the bread lands, kickstarting the bottom toastiness right away.
Step 4: Position Bread in the Basket
- Slide the air fryer basket out. If your basket has large wire gaps, lay down a perforated parchment liner.
- Place the buttered bread slices into the basket in a strict single layer .
- If using bread cutouts, tuck the reserved bread circles into any empty corners of the basket to toast simultaneously.
Step 5: Crack and Load the Eggs
- Pro Tip: Never crack the egg directly from the shell into the bread while it sits inside the hot air fryer. A slip of the hand can rupture the yolk or miss the well entirely.
- Crack one cold egg into a small ramekin or prep bowl.
- Carefully tip the ramekin down close to the bread and slide the egg directly into the center pocket. Repeat with the second egg into the second slice.
- Season the tops with a pinch of fine sea salt and freshly cracked black pepper.
- If adding cheese, sprinkle the shredded cheddar or mozzarella exclusively around the bread’s outer crust border, keeping the yolk uncovered so it cooks evenly.
Step 6: Air Fry to Desired Doneness
- Slide the basket into the air fryer and cook at 350°F (175°C) according to your preferred yolk consistency:
- Soft & Runny Dipping Yolk: Cook for 5 to 6 minutes . The egg whites will turn opaque and fully firm, while the yolk remains bright yellow and warm.
- Jammy / Medium-Soft Yolk: Cook for 6 to 7 minutes . The yolk edges will begin to set while retaining a rich, custardy center.
- Fully Set / Hard Yolk: Cook for 8 minutes . Both the white and yolk will be firm and solid throughout, ideal for on-the-go breakfast sandwiches.
Step 7: Rest, Garnish, and Serve
- Pull the air fryer basket out and let the egg toast rest inside the warm basket for 1 full minute . This short resting period allows the carryover heat to finish setting any loose top layer of egg white without overcooking the delicate yolk.
- Slide a thin spatula underneath each toast slice and transfer to serving plates.
- Garnish with finely minced fresh chives, a dusting of smoked paprika or red pepper flakes, and serve immediately alongside the toasted bread cutouts for dipping.
