Ingredients

The Wings & Dredge

  • 2 lbs (approx. 900g) bone-in chicken party wings (flats and drumettes split, tips removed)

Instructions

Step 1: Prep & Thorough Drying

  1. Rinse and inspect your chicken wings, trimming away any excess loose skin or stray pinfeathers. Lay the wings flat on a cutting board lined with several layers of heavy-duty paper towels. Press firmly with additional paper towels over the top, wicking away every droplet of surface moisture.
  2. Pro-Tip: If time permits, arrange the dried wings on a wire rack set inside a sheet pan and refrigerate uncovered for 30 to 60 minutes. The cold circulating air dehydrates the skin far more effectively than paper towels alone.

Step 2: Combine Seasoning & Dredge

  1. In a small bowl, whisk together the baking powder, cornstarch, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, and dried oregano until uniform. Ensure there are no clumps of baking powder.

Step 3: Coat the Wings

  1. Transfer the dried wings to a dry mixing bowl. Mist or toss lightly with the 1 tablespoon of oil—just enough to give a faint sheen so the dry mix adheres. Sprinkle the seasoning dredge over the wings in two batches, tossing continuously with tongs or clean hands until every crevice of each wing is lightly and evenly dusted.

Step 4: Cooking & Heat Intensities

  1. Preheat: Preheat your air fryer to 360°F (180°C) for 3 to 5 minutes.
  2. Loading: Lightly grease the air fryer basket with avocado oil spray. Arrange the wings in a single layer with skin side facing down. Leave at least a ¼-inch gap between pieces for convective air circulation. If your air fryer is smaller than 5 quarts, cook in two separate batches rather than crowding.
  3. Cook: Slide the basket in and cook at 360°F (180°C) for 12 minutes .
  4. First Flip: Pull the basket out and flip each wing skin-side up using tongs. Cook for an additional 4 minutes at the same temperature. At this point, the wings should look cooked through and the skin will look slightly matte as fat begins pooling in the bottom tray.
  5. Increase Heat: Without removing the wings, adjust the air fryer temperature to its high intensity setting: 400°F (205°C) .
  6. Crisp: Cook for 4 to 5 minutes .
  7. Final Flip: Flip the wings once more to ensure both sides brown evenly, and cook for another 4 to 5 minutes , or until the skin is blistered, dark golden-brown, and audibly crackles when tapped with tongs.
  8. Internal Check: Insert an instant-read thermometer into the thickest part of the meat (avoiding the bone). It should register between 185°F and 195°F (85°C–90°C) . While chicken is safe at 165°F (74°C), wings have abundant connective collagen that only breaks down into succulent gelatin at higher internal temperatures.

Step 5: Saucing & Resting

  1. Remove the wings immediately from the hot air fryer and place them on a clean wire cooling rack. Let them rest for 3 minutes . This rest period allows the crust to harden completely and redistributes internal juices.
  2. For Sauced Wings: Whisk together the melted butter, hot sauce, Worcestershire sauce, and honey in a large bowl. Add the warm wings and toss vigorously for 15 seconds until fully coated. Serve immediately.
  3. For Extra-Crispy Dry Wings: Serve straight from the rack alongside blue cheese dressing, homemade ranch, celery sticks, and lemon wedges.
