Ingredients

  • 6 large eggs (cold, straight from the refrigerator; older eggs peel significantly easier than farm-fresh ones)
  • 4 cups cold water + 2 cups ice cubes (for the mandatory thermal shock bath)

Instructions

Step 1: Prepare the Ice Bath (Intensity: Low)

  1. Before turning on the air fryer, fill a medium bowl with 4 cups of cold tap water and 2 cups of ice cubes. Set this aside near your workspace so it is ready the moment the cooking timer chimes.

Step 2: Arrange the Eggs (Intensity: Low)

  1. Place 6 cold eggs directly into the bottom of your unheated air fryer basket in a single layer.
  2. Airflow Tip: Ensure the eggs do not touch each other directly if possible, allowing convective air currents to circulate 360 degrees around each shell.

Step 3: Cook at Low Convective Heat (Intensity: Passive)

  1. Set the air fryer temperature to 250°F (120°C) . (If your air fryer’s lowest setting is 275°F / 135°C, reduce the cook time by 2 minutes).
  2. Set the timer to 15 minutes for standard hard-boiled eggs.
  3. Press start. Do not open the basket during cooking so the air maintains a steady, uniform temperature.

Step 4: The Ice Bath Shock (Intensity: Low)

  1. As soon as the air fryer beeps, open the basket immediately.
  2. Using silicone-tipped tongs, carefully transfer each hot egg directly into the prepared ice bath.
  3. Submerge the eggs completely in the ice water for 5 full minutes . This stops carryover cooking instantly and shrinks the inner egg structure away from the shell wall.

Step 5: Peel & Serve (Intensity: Low)

  1. Remove an egg from the water. Gently tap both ends on a flat cutting board or counter, then roll it lightly under your palm to create spiderweb cracks across the shell.
  2. Dip the cracked egg back into the water for 3 seconds (water slips underneath the cracked shell membrane).
  3. Peel starting from the wide bottom end where the natural air pocket is located. The shell should glide off in clean, large sections.
  4. Slice and season with flaky sea salt, cracked black pepper, smoked paprika, or everything bagel seasoning.
