Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (about 6–8 oz each)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika

  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

For the Blackberry Jalapeño Filling:

  • 4 oz cream cheese , softened to room temperature
  • 1/3 cup sharp cheddar cheese , shredded (or Monterey Jack for extra melt)
  • 2 tbsp blackberry preserves or jam (seedless works best)
  • 1 medium jalapeño , seeded and finely diced (leave seeds in for extra heat)
  • 1/4 tsp garlic powder
  • Pinch of salt
  • 1 tbsp blackberry preserves
  • 1 tsp apple cider vinegar or water (to thin it out)

Instructions

Step 1: Prepare the Filling

  1. In a small mixing bowl, combine the softened cream cheese, shredded cheddar, blackberry preserves, diced jalapeño, garlic powder, and a pinch of salt. Use a fork or spatula to mash everything together until it forms a uniform, slightly purple-hued mixture. Intensity Note: Ensure the cream cheese is truly soft; otherwise, it will be difficult to stuff the chicken without tearing the meat.

Step 2: Butterfly and Stuff the Chicken

  1. Place a chicken breast on a clean cutting board. Using a sharp knife, carefully slice horizontally through the thickest part of the breast, cutting almost to the other side but leaving the edge intact so it opens like a book (a “butterfly” cut). Repeat with the second breast. Spoon half of the filling mixture into the pocket of each chicken breast. Use your fingers or a spoon to spread it evenly inside. Intensity Note: Do not overstuff; if the filling spills out, it will burn on the air fryer basket. If you have leftover filling, save it for a bagel or toast the next morning!

Step 3: Secure and Season

  1. To prevent the filling from leaking, use 2–3 toothpicks to skewer the open edges of the chicken together. This is a crucial step for a clean presentation. In a small bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Brush this seasoning mixture generously over the outside of both stuffed chicken breasts.

Step 4: Air Fry

  1. Preheat your air fryer to 375°F (190°C) for 3 minutes. Lightly spray the air fryer basket with non-stick cooking spray or brush with a little oil to prevent sticking. Carefully place the stuffed chicken breasts into the basket, ensuring they are not overcrowded (cook in batches if necessary). Cook for 18–22 minutes , flipping halfway through the cooking time. Step 6: Rest and Serve

  1. Remove the chicken from the air fryer and let it rest on a plate for 5 minutes . This allows the juices to redistribute and the molten cheese to set slightly so it doesn’t run out immediately. Carefully remove the toothpicks. Serve hot, spooning any pan juices over the top.
