- 2 tablespoons unsalted butter (plus extra for greasing the ramekins)
- 2 tablespoons powdered erythritol or monk fruit sweetener (powdered works best to prevent a grainy texture)
- 1 large pastured egg
- 1 large egg yolk (adds extra richness and helps create the custard-like lava center)
- 1 tablespoon fine almond flour (blanched)
- 1 tablespoon unsweetened cocoa powder (plus an extra pinch for dusting the ramekins)
- 1/4 teaspoon pure vanilla extract
- A tiny pinch of sea salt (to enhance the chocolate depth)

Instructions
Step 1: Prep the Ramekins and Pre-heat
- Preheat your air fryer to 380°F (190°C) for about 3 to 5 minutes so it reaches a consistent, stable temperature.
- Thoroughly grease two 4-ounce oven-safe ramekins with softened butter or coconut oil.
- Dust the inside of each greased ramekin with a light coating of unsweetened cocoa powder, tapping out any excess. This ensures the cakes will release cleanly when inverted or allow them to be easily eaten straight from the dish.
Step 2: Melt the Chocolate and Butter
- In a microwave-safe bowl, combine the keto dark chocolate (or chocolate chips) and the 2 tablespoons of unsalted butter.
- Microwave in 30-second increments, stirring thoroughly after each interval, until completely melted and smooth. Be careful not to overheat or burn the chocolate. Let it cool for 1 to 2 minutes so it isn’t piping hot.
Step 3: Whisk the Wet Ingredients and Sweetener
- Whisk the powdered erythritol (or monk fruit sweetener) directly into the slightly cooled melted chocolate and butter mixture until well incorporated.
- Add the whole egg, the extra egg yolk, and the pure vanilla extract. Whisk vigorously until the mixture becomes smooth, glossy, and slightly thickened.
Step 4: Fold in the Dry Ingredients
- Sift in the fine almond flour, unsweetened cocoa powder, and a tiny pinch of sea salt.
- Gently fold the dry ingredients into the chocolate mixture using a spatula until just combined and no lumps remain. The batter should be thick, rich, and glossy.
Step 5: Fill and Air Fry
- Divide the chocolate batter evenly between the two prepared ramekins.
- Carefully place the ramekins into the basket of your preheated air fryer.
- Cook at 380°F (190°C) for 8 to 10 minutes . Note: Air fryer models vary significantly in wattage and heat distribution. Check at the 8-minute mark. The edges should look set, firm, and slightly matte, while the very center should still look slightly soft and glossy.
- Do not overcook, or the molten center will bake all the way through into a standard sponge cake.
Step 6: Rest and Serve
- Remove the ramekins from the air fryer using heat-resistant tongs or oven mitts.
- Let the cakes rest in their ramekins for 2 minutes to allow the structure to firm up slightly.
- If desired, run a thin knife around the edge of each cake, place a dessert plate upside down over the top of the ramekin, and carefully flip it over to release the cake onto the plate. Alternatively, serve them directly in the ramekins with a spoon.
- Garnish with a dollop of sugar-free whipped cream and fresh raspberries, then serve immediately while warm.
