- 4 Large Eggs (preferably room temperature)
- 2 tbsp Whole Milk (or heavy cream for extra richness)
- 1/2 cup Shredded Cheddar Cheese (or Mozzarella/Gouda), divided
- 1/4 cup Cooked Ham or Bacon , diced
- 1/4 cup Bell Peppers , finely chopped (red or green)
- 1/4 cup Fresh Spinach or Green Beans , chopped
- 2 tbsp Red Onion , finely diced
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1/8 tsp Garlic Powder
- 1 tbsp Fresh Chives or Parsley , finely chopped (for garnish)

Instructions
- Prep the Air Fryer & Pan: Place a parchment paper liner into the bottom of your air fryer basket, or lightly grease a 6-inch air-fryer-safe pan with non-stick olive oil spray. Preheating the air fryer to $375^\circ\text{F}$ for 3 minutes ensures even cooking.
- Whisk the Eggs: In a medium mixing bowl, combine the 4 large eggs, milk, salt, black pepper, and garlic powder. Whisk vigorously for about 45 to 60 seconds until the mixture is uniform, light, and slightly frothy.
- Mix in the Fillings: Fold in the diced ham, chopped bell peppers, spinach (or green beans), red onion, and half of the shredded cheese into the egg mixture.
- Pour into the Liner/Pan: Carefully pour the egg mixture into the prepared parchment liner inside the air fryer basket. Spread the vegetables and ham evenly using a fork so every bite gets equal distribution.
- Air Fry: Insert the basket into the air fryer. Cook at $375^\circ\text{F}$ for 8 to 10 minutes . Note: At around the 7-minute mark, check the top. If it is setting nicely, sprinkle the remaining half of the shredded cheese over the top and cook for the remaining 2 to 3 minutes until the cheese is melted and the center is completely set.
- Rest & Serve:
- Once cooked, carefully lift the omelette out using the edges of the parchment paper (or slide it out using a soft spatula). Let it rest for 2 minutes before slicing. Garnish with chopped fresh chives or parsley. Serve warm.
