Instructions
Step 1: Make & Rest the Dough
- In a large mixing bowl, whisk together the all-purpose flour and salt.
- Make a small well in the center of the flour. Pour in the oil, vinegar, cachaça, and ¾ cup of warm water.
- Mix with a fork until the dough starts to clump together. If it feels too dry, add the remaining water 1 tablespoon at a time.
- Turn the dough onto a lightly floured surface and knead vigorously for 5 to 7 minutes until smooth and elastic.
- Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes . (This relaxes the gluten so you can roll it out ultra-thin).
Step 2: Prepare the Beef Filling
- Heat olive oil in a skillet over medium-high heat. Add the diced onion and minced garlic, sautéing for 2 to 3 minutes until fragrant.
- Add the ground beef, breaking it up with a wooden spoon. Season with cumin, paprika, salt, and black pepper. Cook until browned and all moisture has evaporated.
- Remove the skillet from heat. Stir in the chopped olives, green onions, parsley, and hard-boiled egg.
- Crucial Tip: Let the filling cool completely before filling the dough. Warm filling creates steam, making the pastry soggy.
Step 3: Roll & Assemble
- Divide the rested dough into 2 equal parts. Keep one half covered while working.
- Dust your work surface with flour. Roll the dough out as thin as possible—ideally about 1/16 inch thick (similar to a dime).
- Cut the dough into rectangular sheets (roughly 4×6 inches).
- Spoon 2 tablespoons of cooled beef filling onto one half of each rectangle, leaving a ½-inch border around the edges.
- Lightly moisten the edges with water using your finger or a brush. Fold the dough over the filling to form a sealed rectangle.
- Firmly press the edges with your fingers, then crimp along all three open sides with the tines of a fork to ensure a tight seal.
Step 4: Air Fry to Golden Perfection
- Preheat your air fryer to 380°F (193°C) for 3 to 5 minutes.
- Generously spray or brush both sides of each pastel with cooking oil. (Oil is essential in the air fryer to achieve a blistering, golden crust instead of a dry, baked texture).
- Place 2 to 3 pastéis in the air fryer basket in a single layer without overcrowding.
- Air fry at 380°F for 5 to 6 minutes . Flip them over, light-spray again if needed, and cook for another 4 to 5 minutes until golden brown and blistered.
- Repeat for the remaining pastéis. Serve hot with hot sauce or vinaigrette!
