The Meat
- 1 full rack (2.5 to 3 lbs) Baby back pork ribs (or St. Louis cut, trimmed)
The Binder
- 1 tbsp Yellow mustard (or olive oil; helps the dry rub adhere without affecting flavor)
The Signature Dry Rub
- 2 tbsp Brown sugar (substitute coconut sugar or erythritol for low-sugar/keto)
- 1 tbsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Coarse kosher salt
- ½ tsp Freshly cracked black pepper
- ½ tsp Chili powder
- ¼ tsp Ground cumin
- ⅛ tsp Cayenne pepper (optional, for gentle heat)
The Finish & Glaze
- ½ cup Quality barbecue sauce (smoky, sweet, or vinegar-based)
- 1 tbsp Apple cider vinegar (or melted butter, to thin the glaze)

Instructions
Step 1: Prep and Remove the Membrane
- Lay the rack of ribs bone-side up on a clean cutting board.
- Locate the thin, silvery membrane (peritoneum) covering the bones. Slide the tip of a dull butter knife between the membrane and one of the bones at the narrow end to pry it loose.
- Grab the loose edge with a folded paper towel for traction, then pull the membrane firmly in one continuous motion away from the rack. Discard it. Pro Tip: Removing the membrane prevents the ribs from curling while cooking and allows the seasoning and air circulation to penetrate directly into the meat.
Step 2: Portion and Season
- Using a sharp chef’s knife, slice the rack into 3- or 4-bone sections so they fit easily into your air fryer basket without overlapping.
- Pat the meat thoroughly dry on both sides with paper towels.
- Brush a very thin layer of yellow mustard over all sides of each section.
- In a small bowl, whisk together the brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, chili powder, cumin, and cayenne.
- Generously coat both sides of the ribs with the dry rub, pressing it firmly with your hands so it adheres. Let the ribs rest at room temperature for 10 minutes while preheating the appliance.
Step 3: Phase 1 – Low-Intensity Render (380°F / 195°C)
- Preheat your air fryer to 380°F (195°C) for 3 to 5 minutes.
- Arrange the rib sections in the air fryer basket meat-side down (bone-side up). Leave small air gaps between sections so the heat circulates evenly. If your basket is compact, cook in two separate batches.
- Air fry at 380°F (195°C) for 15 minutes .
- Use tongs to carefully flip the ribs meat-side up . Air fry for an additional 10 minutes at 380°F. The meat should begin retracting from the bone tips, and an instant-read thermometer should register between 185°F and 195°F (85°C to 90°C).
Step 4: Phase 2 – High-Intensity Glaze & Caramelize (400°F / 200°C)
- In a small ramekin, stir together the barbecue sauce and apple cider vinegar.
- Brush a generous layer of sauce across the top and sides of the meat.
- Increase the air fryer temperature to 400°F (200°C) .
- Cook for 3 to 5 minutes , monitoring closely through the basket window. The sauce will bubble, darken, and tack up into a glossy, caramelized glaze with lightly charred edges.
Step 5: Rest and Serve
- Transfer the ribs to a clean cutting board.
- Tent loosely with aluminum foil and let the meat rest undisturbed for 5 minutes . Resting allows the pressurized juices inside the muscle fibers to redistribute evenly throughout each cut.
- Slice between each bone and serve warm with extra barbecue sauce on the side.
