Instructions

Step 1: Drain and Rinse

  1. Open the cans of potatoes and pour them into a fine-mesh colander. Rinse thoroughly under cold tap water to wash away excess sodium and preserved starch liquid.

Step 2: Dry Thoroughly (Crucial Step)

  1. Transfer the rinsed potatoes onto a clean kitchen towel or several sheets of paper towels. Gently pat them dry. Allow them to air-dry for 3–5 minutes. Removing surface moisture ensures maximum crispiness rather than steaming in the basket.

Step 3: Halve or Quarter (Optional)

  1. If using whole canned potatoes, cut larger spuds in half or quarters to expose the fluffy interior and create more surface area for roasting.

Step 4: Season the Potatoes

  1. Place the dried potatoes into a large mixing bowl. Drizzle with olive oil, then sprinkle garlic powder, onion powder, smoked paprika, oregano, salt, and black pepper. Toss gently until every piece is evenly coated in oil and spices.

Step 5: Preheat the Air Fryer

  1. Preheat your air fryer to 400°F (200°C) for 3 minutes. Preheating guarantees an instant sear as soon as the potatoes touch the hot basket grate.

Step 6: Air Fry in a Single Layer

  1. Transfer the seasoned potatoes into the air fryer basket. Spread them out into a single layer, ensuring they are not overcrowded. Work in batches if using a smaller air fryer.

Step 7: Roast with Medium-High Intensity

  1. Air fry at 400°F (200°C) for 18 to 20 minutes . Shake the air fryer basket halfway through (around the 10-minute mark) to redistribute the potatoes and achieve even browning.

Step 8: Garnish and Serve

  1. Once golden-brown and crispy with blistering skins, remove the potatoes from the air fryer. Transfer to a serving dish, sprinkle with fresh chopped parsley and optional grated Parmesan cheese, and serve hot immediately.
