Instructions

1. Preparation & Moisture Removal

  1. Remove the salmon fillets from refrigeration roughly 10 to 15 minutes before cooking. Allowing the fish to lose its severe chill promotes uniform cooking throughout the center.
  2. Inspect the fillets for pin bones by gently running clean fingertips down the center ridge. Remove any lingering bones using culinary tweezers.
  3. Take dry paper towels and thoroughly blot moisture from all sides of the salmon. Dryness is vital: excess surface water turns into steam inside the basket, leading to soggy skin rather than a crisp, blistered finish.

2. Seasoning & Oil Application

  1. In a small ramekin or bowl, whisk together the smoked paprika, garlic powder, onion powder, dried oregano, kosher salt, cracked black pepper, and optional cayenne pepper.
  2. Lightly brush all sides of each fillet with the olive oil, paying extra attention to the skin side.
  3. Sprinkle the spice blend evenly across the tops and sides of the fillets. Lightly press the spices into the flesh so the seasoning adheres firmly during high-intensity air circulation.

3. Preheating the Air Fryer

  1. Set your air fryer to 400°F (200°C) on the Air Fry setting and preheat for 3 to 4 minutes . Preheating ensures the cooking surface is blisteringly hot the moment the fish touches the grate, preventing sticking and immediately rendering the skin fat.

4. Air Frying (Intensity & Timing)

  1. If your basket is prone to sticking, lightly coat the grate with high-smoke-point oil spray (such as avocado oil; avoid aerosol cans with propellants that degrade non-stick coatings).
  2. Arrange the salmon fillets inside the basket in a single layer, skin-side down , maintaining at least ½ inch of space between each piece. Do not overcrowd the basket; cook in batches if your air fryer capacity requires it.
  3. Cook at 400°F (200°C) for 8 to 10 minutes , depending on thickness: Thinner fillets (approx. ¾-inch thick): Check at 7 to 8 minutes .
  4. Thick center-cut fillets (1 to 1.5 inches thick): Require 9 to 11 minutes .
  5. Do you need to flip the salmon? No. Air fryer airflow cooks both sides evenly. Leaving the fish skin-side down allows the bottom heat to crisp the skin while the top heat creates a roasted crust on the spices.

5. Checking Doneness & Resting

  1. Insert an instant-read thermometer into the thickest part of the fillet: Medium-Rare: 125°F (52°C)
  2. Medium (Recommended): 130°F to 135°F (54°C to 57°C)
  3. Well-Done (USDA Standard): 145°F (63°C)
  4. Remove the fillets carefully using a wide silicone spatula or tongs.
  5. Transfer to a warm plate and let rest for 2 to 3 minutes . The residual carryover heat will finish cooking the interior while re-settling the internal juices.
  6. Squeeze fresh lemon juice over the top and garnish with minced parsley before plating.
