Instructions

Step 1: Cook the Pasta Shells

  1. Bring a large pot of salted water to a boil. Cook the jumbo shells until they are just al dente—about one minute less than the package directions suggest. They need to be firm enough to hold their shape when stuffed; overcooked shells will tear and turn mushy . Drain them and rinse briefly with cool water to stop the cooking process. Lay them out on a parchment-lined baking sheet to prevent sticking while you prepare the filling.

Step 2: Make the Taco Filling

  1. Heat a large skillet over medium-high heat. Add the ground beef, diced onion, and green pepper if using. Cook, breaking the meat apart with a wooden spoon, until the beef is browned and the vegetables are tender—about 5-7 minutes. Drain any excess fat if needed.
  2. Stir in the taco seasoning and a small splash of water (about 2 tablespoons). Let it simmer for another minute or two until the seasoning is fully incorporated and the mixture thickens slightly. If you’re using cream cheese, stir it in now until it melts into the meat, creating a creamy, cohesive filling . Remove from heat and let the mixture cool for about 5 minutes—this makes stuffing much easier and less messy.

Step 3: Stuff the Shells

  1. Once the filling has cooled slightly, it’s time to assemble. Hold a cooked shell in the palm of your hand and spoon about 1 tablespoon of the taco meat into the opening. Add a generous pinch of shredded cheese on top of the meat .
  2. For an extra-crispy, sealed presentation, you can wrap a second shell over the open side of the stuffed shell to form a “lid” . This creates a completely enclosed pocket that holds everything together during air frying. Alternatively, simply leave the shells open-faced for a more traditional stuffed shell look.

Step 4: Air Fry the Shells

  1. Preheat your air fryer to 350°F (180°C) for about 3 minutes.
  2. Lightly coat the air fryer basket with cooking spray. Arrange the stuffed shells in a single layer, leaving a little space between each one so the hot air can circulate. Depending on the size of your air fryer, you may need to cook them in two batches. Give the tops of the shells a light spray of oil as well—this helps the pasta edges crisp up beautifully .
  3. Air fry at 350°F for 8-10 minutes until the cheese is melted and the pasta edges are golden and slightly crispy . If you prefer a crunchier exterior, you can extend the cook time by a few minutes, but keep an eye on them—the shells can go from perfectly crispy to overly hard quite quickly .

Step 5: Make the Dipping Sauce

  1. While the shells are air frying, whisk together the sour cream and taco seasoning in a small bowl. Add a dash of hot sauce if you like a little kick. This cool, creamy sauce balances the seasoned, crispy shells perfectly .

Step 6: Serve and Enjoy

  1. Remove the shells from the air fryer using tongs or a spatula. Let them rest for 2-3 minutes before serving—the filling will be very hot. Plate them with the dipping sauce on the side and pile on your favorite toppings: avocado, salsa, jalapeños, cilantro, or a squeeze of lime. These are best enjoyed immediately while the shells are still crispy and the cheese is gooey.
