- Submerge the wooden skewers in warm water for at least 10–15 minutes while prepping the potatoes. This prevents the wood from burning or charring in the air fryer.
- Wash and scrub the potatoes thoroughly. You can leave the skin on for maximum crispiness and nutrients. Carefully pierce the center of each potato lengthwise with a soaked skewer, pushing it all the way through until the skewer sticks out of both ends.
- Place the skewered potato flat on a cutting board. Hold your knife at a slight angle relative to the skewer. Starting at one end, cut down until the blade hits the wooden skewer. Keep the knife in place and roll the potato away from you with your other hand, cutting in a continuous spiral motion all the way down to the opposite end.
- Gently pull the sliced potato coils apart along the skewer, stretching the spiral evenly so there is a small gap between each slice. This allows the hot air to circulate freely around every edge.
- Place the spiral skewers in a large bowl filled with cold water for 10 minutes . Soaking removes excess surface starch, preventing the slices from sticking together or turning soggy. Drain and pat completely dry with paper towels.
- In a small dish, mix the garlic powder, onion powder, paprika, oregano, salt, black pepper, and cayenne. Brush the potato spirals generously with olive oil or melted butter, ensuring it gets between all the slices. Dust the spice blend evenly over the entire surface, rotating the skewers to cover every angle.
- Preheat your air fryer to 380°F (193°C) . Place the skewers into the air fryer basket in a single layer without overlapping (trim skewer ends if they hit the basket walls). Air fry for 18 to 20 minutes , flipping/rotating the skewers halfway through at the 10-minute mark.
- Pro Tip: For extra crispiness, spray lightly with cooking oil or sprinkle fine Parmesan during the last 3 minutes of cooking.
