Ingredients
The Zucchini
- 2 medium zucchinis (about 1 lb / 450g). Look for firm, medium-sized zucchinis. Avoid mammoth zucchinis, as they have large seeds and high water content, which makes them soggy.
The Anti-Inflammatory Binder
- 1 large egg (pasture-raised if possible).
- 1 tablespoon extra virgin olive oil (plus a little extra for spraying).
The Crispy Coating
- ¾ cup almond flour (finely ground).

- 1 teaspoon ground turmeric .
- ½ teaspoon garlic powder .
- ½ teaspoon onion powder .

- ¼ teaspoon freshly cracked black pepper (Do not skip this—it activates the turmeric).

Phase 1: Preparation (Time: 10 Minutes)
- 1. Wash and Cut: Wash your zucchinis thoroughly. Do not peel them; the skin contains the majority of the fiber and nutrients. Slice off the stem and the bottom tip. Cut the zucchini into ½-inch thick rounds or spears. (Rounds are easier to coat and fit more uniformly in the air fryer).
- 2. The “Sweat” (Crucial Step): Zucchini is 95% water. If you don’t remove some of this water, your air fryer will steam the zucchini instead of crisping it.
- Lay the zucchini slices on a plate lined with paper towels.
- Sprinkle them lightly with a pinch of salt.
- Let them sit for 10 minutes.
- After 10 minutes, press another paper towel firmly on top of the slices to absorb the released moisture.
- 3. Set Up Your Dredging Station:
- Bowl 1: Whisk the egg and 1 tablespoon of olive oil together.
- Bowl 2: Combine the almond flour, Parmesan cheese, turmeric, garlic powder, onion powder, oregano, cayenne, salt, and black pepper. Mix well with a fork to ensure the spices are evenly distributed.
Phase 2: The Coating (Time: 5 Minutes)
- 4. Dredge: Working in batches (do not do all of them at once), take a zucchini slice and dip it into the egg mixture. Allow the excess egg to drip off. 5. Coat: Transfer the egg-coated zucchini to the almond flour mixture. Press gently to ensure the coating sticks. Flip it over and coat the other side. For extra crispiness, you can double-dip (egg -> flour -> egg -> flour), but a single coat is usually sufficient if you press firmly.
- 6. Prep for Air Fryer: Place the coated slices on a clean plate. Do not stack them.
Phase 3: The Air Fry (Time: 12–15 Minutes)
- 7. Preheat: Preheat your air fryer to 400°F (200°C) for 3 minutes. Preheating is essential for the “fry” effect.
- 8. Arrange: Lightly spray the air fryer basket with olive oil (or use a pastry brush). Place the zucchini slices in a single layer. Do not overcrowd. If they touch, they will steam. You will likely need to cook these in 2 or 3 batches depending on the size of your air fryer.
- 9. Cook:
- First Batch: Air fry at 400°F (200°C) for 8 minutes .
- Flip: Open the basket and flip the zucchini carefully with tongs.
- Second Batch: Air fry for another 4 to 6 minutes until golden brown and crispy.
- Note on Intensity: Keep an eye on them during the last 4 minutes. Almond flour burns faster than wheat breadcrumbs. If you see the edges turning dark brown, pull them out immediately.
- 10. Serve Immediately: Transfer the crispy zucchini to a serving plate. Garnish with fresh lemon juice (the acidity brightens the flavor and aids digestion).
