Instructions

1. Prepare the Roots and Citrus

  1. Wash the lime, ginger root, and turmeric root thoroughly under cool running water.
  2. Thinly slice the ginger and turmeric across the grain into rounds roughly 2–3 mm thick to expose maximum surface area. Using a sharp knife or citrus peeler, remove 2 wide strips of lime peel (avoiding the white, bitter pith). Cut both limes in half and squeeze out 3 tablespoons (45 ml) of fresh lime juice. Set the juice aside in a small bowl at room temperature—do not add it to the simmering pot.

2. Build the Infusion Base

  1. Pour the 2.5 cups of filtered water into a small non-reactive saucepan. Drop in the sliced ginger, sliced turmeric, lime peels, cinnamon stick, and pinch of freshly ground black pepper.

3. Simmer and Extract

  1. Place the saucepan over medium-high heat until it reaches a gentle, rolling boil.
  2. Once boiling, immediately reduce the heat to low. Cover the pan with a tight-fitting lid to prevent volatile essential oils from evaporating into the air. Let the ingredients simmer gently for 8 to 10 minutes. The liquid will turn a luminous, golden amber color.

4. Cool and Finish

  1. Remove the saucepan from the stove. Take off the lid and let the mixture sit undisturbed for 2 to 3 minutes, bringing the liquid down from a boil to around 60°C–70°C (140°F–160°F).
  2. Pour the reserved fresh lime juice directly into the warm pot. Adding the lime juice at this reduced temperature protects the natural enzymes and ascorbic acid from heat degradation. If using raw honey, stir it in now until completely dissolved.

5. Strain and Serve

  1. Pour the tea through a fine-mesh strainer into two heat-safe ceramic mugs. Garnish with a thin wheel of fresh lime and a couple of bruised mint leaves. Sip slowly while comfortably warm.
