Skillet Base
- 1 tbsp avocado oil or neutral vegetable oil (high smoke point)
- 1 lb (450g) lean ground beef (85/15 or 90/10 ratio)
- 1 medium yellow onion, thinly sliced
- 4 cloves fresh garlic, finely minced
- 1 tbsp fresh ginger, grated finely
- 6 cups green cabbage, thinly shredded (or one 14 oz bag of classic coleslaw mix)
- 1 large carrot, grated or julienned
- 3 stalks green onions (scallions), sliced on the bias (white and green parts separated)

Step 1: Whisk the Sauce Base
- In a small mixing bowl, combine the low-sodium soy sauce, toasted sesame oil, maple syrup (or sugar-free sweetener), sriracha, rice vinegar, and crushed red pepper flakes. Whisk vigorously until the sweetener dissolves and the liquids are fully emulsified. Set the bowl aside near your cooktop area for quick access during cooking.
Step 2: Sear and Brown the Ground Beef
- Place your large skillet or wok over medium-high heat (approx. 375°F to 400°F / 190°C to 200°C) and add 1 tablespoon of avocado oil. Allow the oil to shimmer across the bottom of the pan for about 30 seconds.
- Add the ground beef, breaking it apart with your wooden spoon into uniform, small crumbles. Cook undisturbed for 2 minutes to establish a caramelized, golden crust on the bottom. Continue stirring and breaking up the meat for an additional 4 to 5 minutes over medium-high heat until no pink remains.
- If excess fat accumulates (more than 2 tablespoons), carefully tilt the pan and spoon out the surplus, leaving a slight layer of fat to brown the aromatics.
Step 3: Bloom the Fresh Aromatics
- Reduce the burner setting slightly to medium heat (approx. 325°F to 350°F / 160°C to 175°C). Push the browned beef to the outer edges of the skillet, creating an open well in the center.
- Add the sliced yellow onion and the white parts of the sliced scallions into the center well. Saute for 2 minutes until translucent. Next, add the minced garlic and grated ginger directly into the sizzling center fat. Stir constantly for 60 seconds until fragrant, taking care not to burn the garlic. Once aromatic, toss the beef and aromatic mixture together across the entire surface of the pan.
Step 4: Wilt the Cabbage and Grated Carrots
- Increase the heat back to medium-high . Dump the shredded cabbage and grated carrots directly on top of the beef mixture. It may look piled high initially, but the volume will decrease rapidly as moisture releases.
- Using tongs or a large spatula, toss the ingredients continuously for 3 to 5 minutes over medium-high intensity. The goal is to soften the cabbage so it turns tender-crisp while maintaining a satisfying structural bite without becoming soggy or limp.
Step 5: Incorporate Sauce and Glaze
- Pour the prepared sauce mixture evenly over the contents of the skillet. Toss continuously for 2 to 3 minutes over medium-high heat , allowing the liquid to bubble vigorously and reduce slightly. The sauce should evenly coat the ground beef crumbles and glaze every ribbon of shredded cabbage. Remove the skillet from the heat source immediately once the sauce thickens and adheres to the ingredients.
Step 6: Garnish and Serve Hot
- Fold in the reserved green parts of the sliced scallions. Sprinkle toasted sesame seeds across the top and finish with an optional light drizzle of chili oil if additional heat is desired. Serve immediately directly from the skillet or transferred to warmed shallow serving bowls.
