The Stuffing:

- 4 oz Cream Cheese: Full-fat cream cheese is recommended for the best texture. It should be softened to room temperature.
- 1/2 cup Mozzarella Cheese: Shredded. This melts beautifully and acts as the “glue” for the stuffing.
- 1/4 cup Parmesan Cheese: Freshly grated. This adds a salty, nutty kick.
- 1 tsp Lemon Zest: This is the secret ingredient. It brightens up the heavy cheese and complements the asparagus.

- 1. Prepare the Asparagus: Wash the asparagus spears thoroughly. Snap off the woody ends by bending the stalk near the bottom; it will naturally break at the tender point. If your asparagus is particularly thick, bring a small pot of water to a boil and blanch the spears for 2 minutes, then transfer to an ice bath. This ensures they will be tender inside the chicken. If you have thin asparagus, you can skip the blanching.
- 2. Prepare the Cheese Filling: In a small mixing bowl, combine the softened cream cheese, shredded mozzarella, grated Parmesan, lemon zest, and red pepper flakes (if using). Mix with a fork until well incorporated and smooth. Set aside.
- 3. Butterfly the Chicken: Place a chicken breast on a sturdy cutting board. Using a sharp knife, carefully slice horizontally through the middle of the breast, stopping about half an inch from the edge. Do not cut all the way through. Open the breast like a book. If the breast is very thick, place a piece of plastic wrap over it and gently pound it with a meat mallet to an even thickness of about 1/4 inch. Repeat with the second breast.
- 4. Season the Chicken: In a small bowl, mix the garlic powder, onion powder, smoked paprika, oregano, salt, pepper, and Italian seasoning. Brush the outside and inside of the chicken breasts lightly with olive oil. Sprinkle the seasoning mixture evenly over both sides of the chicken.
- 5. Assemble the Rolls: Spread half of the cream cheese mixture onto the inside surface of one chicken breast. Place 4–5 asparagus spears on top of the cheese, aligning them so they run parallel to the length of the chicken. Roll the chicken up tightly around the asparagus.
- 6. Secure the Roll: Use 2–3 toothpicks to secure the seam of the chicken roll. Insert them at an angle, weaving through the overlap to hold it shut. Repeat the stuffing and rolling process with the second chicken breast. Tip: If you have extra asparagus, you can tuck them into the air fryer basket alongside the chicken.
Phase 2: The Air Fry (Time: 20 Minutes | Intensity: Low)
- 7. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for 3 minutes. Preheating is crucial for air fryer cooking as it helps the chicken sear immediately, locking in juices.
- 8. Arrange in Basket: Lightly spray the air fryer basket with non-stick cooking spray or brush with a little oil to prevent sticking. Place the stuffed chicken breasts into the basket. Ensure they are not overcrowding; air needs to circulate around them to crisp the bacon or skin. If your air fryer is small, cook them in batches.

- 10. Check for Doneness: The most reliable way to check doneness is using a meat thermometer. Insert it into the thickest part of the chicken (avoiding the cheese and asparagus). The internal temperature should read 165°F (74°C) . If it is not there yet, air fry for another 3–5 minutes.
- 11. Rest: Once cooked, remove the chicken from the air fryer and place it on a cutting board. Let it rest for 5 minutes . This allows the juices to redistribute. If you cut it immediately, the cheese will run out and the meat will be dry.
Phase 3: Finishing (Time: 2 Minutes | Intensity: Low)
- 12. Serve: Carefully remove the toothpicks. Slice the chicken into medallions (about 1-inch thick) to show off the beautiful spiral of asparagus and cheese. Serve immediately with a squeeze of fresh lemon juice and a sprinkle of fresh parsley.
