This Avocado, Tomato, and Egg Salad is a contemporary protein-packed bowl that brings together the best of fresh produce with satisfying richness. It combines creamy avocado, juicy tomatoes, and protein-rich eggs in a way that feels like a restaurant creation but takes only minutes at home. Making this salad yourself means you control the quality of every ingredient, skip unnecessary additives, and save money while eating better than most café offerings.

Ingredients

  • 2 ripe avocados, diced
  • 3 medium tomatoes, chopped
  • 4 large eggs, hard boiled and sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons sesame seeds
  • 1 tablespoon flax seeds
  • 1/4 cup pine nuts
  • Freshly ground black pepper to taste
  • Sea salt to taste
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon honey (optional)

Instructions

  1. Place eggs in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat, then immediately remove from heat and cover. Let them sit for 10 minutes exactly. Transfer to an ice bath right away to stop the cooking. Once cool, peel and slice them into rounds or quarters.
  2. Cut avocados in half lengthwise, remove the pit, and scoop the flesh out with a spoon. Dice them into bite-sized cubes. If not serving immediately, toss the avocado cubes gently with a tiny squeeze of lemon juice to prevent browning.
  3. Choose ripe, firm tomatoes. Cherry or grape tomatoes can be halved. Cut larger tomatoes into chunks similar in size to the avocado pieces. If particularly juicy, remove some seeds to keep the salad from getting watery.
  4. In a dry skillet over medium heat, toast pine nuts until golden and fragrant, about 3 to 4 minutes. Remove to a plate, then toast sesame seeds in the same pan for about 2 minutes until they start popping and smell nutty.
  5. In a large serving bowl or individual bowls, arrange avocado chunks and tomato pieces. Nestle the sliced boiled eggs on top. Crumble the feta cheese over everything so it is distributed throughout.
  6. Whisk together the olive oil, lemon juice, and optional mustard and honey in a small bowl. Drizzle the dressing over the salad just before serving. Sprinkle toasted pine nuts, sesame seeds, and flax seeds over the top. Finish with several good grinds of black pepper and a pinch of sea salt.
  7. Serve immediately while the textures are at their peak.

Notes

Prep time: 10 minutes. Cooking time: 10 minutes (for boiling eggs). Total time: 20 minutes. If you boil your eggs ahead of time, this salad comes together in under 10 minutes. For a vegan version, skip eggs and feta, add chickpeas or white beans, and use nutritional yeast. For a dairy-free version, omit feta or use a dairy-free alternative. You can add grilled chicken, seared tuna, or smoked salmon for a protein boost. Swap seeds and nuts as desired (e.g., pumpkin seeds, almonds, walnuts, or sunflower seeds). Add red pepper flakes, jalapeño, or hot sauce for spice. Serve over quinoa, farro, or mixed greens for a more filling meal. Store components separately to maintain freshness; assembled salad lasts about 24 hours in the refrigerator if covered with plastic wrap. Do not freeze.
